Best served with appalam, potato chips or papads. Ingredients: Kovakkai (Tindora) – 5 to 6, tender ones, finely sliced or chopped Basmati Rice – 1 cup, cooked Onion – 1, small, finely chopped Tomato – 1, small, finely chopped Garlic – 2 cloves, small Red Chilli Powder – 3 tsp Oil – 3 tsp Coriander Leaves – handful, chopped Salt as per tasteRoast and Grind: Dry Red Chilli – 1, small Bengal Gram Dal – 3 tsp Coriander Seeds – 4 to 5 tsp Coconut – 4 to 5 tsp, grated Asafoetida – 1/4 tsp Oil – 1/2 tspMethod: 1. Heat 1/2 tsp oil in a kadhai over medium flame. 2. Add the ingredients for roast and grind. 3. Stir-fry for a minute and grind them to a fine powder. 4. Heat 3 tsp of oil in another pan. 5. Saute the onions, tomatoes and garlic for a minute. 6. Add red chilli powder, salt and kovakkai. 7. Stir well and cover the pan with a lid. 8. After 2 to 3 minutes or when the kovakkais are cooked, add the ground powder. 9. Mix well. 10. Add the rice and stir well. 11. Garnish with coriander leaves. 12. Serve with papad or appalam.
