%3C/p%3E%3Cp%3ESo%20when%20Aparna%20gave%20a%20cumin%20and%20date%20bread%20from%20Iran%20I%20was%20happy%20to%20go%20with%20it.%20After%20all%20its%20tough%20seeing%20the%20date%20packet%20peeping%20out%20whenever%20I%20open%20the%20fridge.%20I%20know..%3C/p%3E%3Cp%3EAnyways%20the%20only%20catch%20here%20was%20will%20my%20daughter%20give%20a%20thumbs%20up?%20The%20bread%20also%20had%20spice%20ingredients%20like%20turmeric%20and%20cumin%20seeds%20along%20with%20dates%20and%20will%20the%20combo%20be%20a%20hit?%3C/p%3E%3Cp%3EI%20actually%20couldn't%20wait%20to%20taste%20the%20bread%20and%20was%20biting%20my%20nails%20when%20finally%20I%20got%20a%20thumbs%20up%20sign%20from%20her.%20Whew..%3C/p%3E%3Cp%3ENot%20much%20can't%20be%20found%20about%20this%20bread%20on%20googling%20and%20this%20recipe%20from%20Aparna%20for%20We%20Knead%20to%20Bake%20%2318%20is%20from%20the%20Greg%20&%20Lucy%20Malouf's%20book%20-%20Saraban-The%20Chefs'%20Journey%20through%20Persia.As%20usual%20I%20halved%20the%20recipe%20and%20replaced%20egg%20or%20rather%20half%20of%20it%20with%20cornstarch.Also%20I%20replaced%20almost%20half%20of%20the%20all%20purpose%20flour%20with%20whole%20wheat%20flour.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EPreparation:%3C/p%3E%3Cp%3EDissolve%20yeast%20in%20water%20and%20keep%20aside%20for%2010%20minutes%20and%20let%20it%20bubble%20up%20a%20bit.%3C/p%3E%3Cp%3EAdd%20in%20the%20flours,%20crushed%20cumin%20(1.25%20tsp)%20,%20sugar,%20turmeric%20and%20salt%20to%20a%20%20bowl%20and%20mix%20well.%20Add%20the%20yeast%20mix%20and%20optional%20egg%20and%20mix%20till%20it%20is%20incorporated.%20I%20used%201tbsp%20cornstarch%20mixed%20into%20a%20paste%20with%201.5%20tsp%20of%20water%20to%20replace%20half%20an%20egg.%3C/p%3E%3Cp%3EAdd%20milk%20and%20oil%20and%20knead%20to%20have%20a%20smooth%20pliable%20dough%20thats%20not%20sticky.%20I%20needed%20more%20liquid%20to%20get%20a%20pliable%20dough.%20So%20I%20added%20around%202-3%20tbsp%20of%20milk%20and%20water%20each%20and%20kneaded%20till%20I%20got%20a%20dough.%20It%20was%20pliable%20and%20yellow%20in%20colour%20and%20moist,%20but%20not%20sticky.%20It%20didn't%20look%20smooth%20was%20%20okay.%3C/p%3E%3Cp%3EShape%20into%20a%20ball%20and%20place%20in%20a%20greased%20%20bowl,%20turning%20once%20to%20coat.%20Cover%20loosely%20with%20a%20plastic%20wrap%20and%20let%20it%20rise%20until%20doubled%20for%20an%20hour%20atleast.%20I%20went%20for%20almost%202%20hours.%3C/p%3E%3Cp%3EWhen%20risen%20deflate%20it%20,%20shape%20into%20a%20round%20and%20put%20back%20for%20a%20second%20rise%20for%20an%20hour%20or%20so.%3C/p%3E%3Cp%3EPrepare%20the%20filling%20by%20mixing%20the%20filling%20ingredients%20together%20in%20a%20bowl.%3C/p%3E%3Cp%3EDivide%20the%20dough%20into%202%20portions%20and%20each%20portion%20into%202%20giving%204%20portions.%20Working%20with%20one%20portion%20at%20a%20time,%20roll%20out%20the%20portion%20into%20a%201/4%22%20-1/8%22%20thick%20rectangle.%3C/p%3E%3Cp%3EChoose%20a%20cookie%20cutter%20that%20is%208cm%20widest,%20press%20it%20down%20lightly%20on%20one%20half%20of%20the%20rectangle.%20You%20can%20see%20the%20outline/marks%20on%20the%20dough.%3C/p%3E%3Cp%3EPlace%201%20tsp%20of%20filling%20at%20the%20approximate%20centre%20of%20this%20mark/outline,%20fold%20over%20the%20other%20half%20of%20the%20rectangle%20over%20the%20filling%20and%20now%20it%20looks%20like%20a%20covered%20square%20or%20circle%20based%20on%20the%20cookie%20cutter%20you%20have%20chosen.%3C/p%3E%3Cp%3EWith%20the%20same%20cookie%20cutter,%20cut%20the%20portion%20with%20the%20filling%20in%20the%20centre%20and%20in%20such%20a%20way%20that%20the%20sides%20are%20neat%20and%20well%20sealed.%3C/p%3E%3Cp%3ERepeat%20with%20the%20remaining%20portions%20and%20reroll%20the%20scraps%20and%20repeat%20the%20process%20to%20get%202-3%20pieces%20based%20on%20size.%20I%20got%20a%20total%20of%206%20pieces%20and%201%20smaller%20piece.%3C/p%3E%3Cp%3EPlace%20the%20komaj%20on%20a%20lightly%20greased%20or%20lined%20%20baking%20sheet%20leaving%20some%20space%20between%20them%20as%20they%20puff%20up%20on%20baking.%20Let%20them%20sit%20for%2015-20%20minutes.%3C/p%3E%3Cp%3EBrush%20them%20with%20milk%20and%20sprinkle%20remaining%20cumin%20seeds%20on%20top%20pressing%20lightly.%3C/p%3E%3Cp%3EBake%20in%20a%20preheated%20oven%20at%20200C%20for%208-10%20minutes%20.%20Take%20out%20and%20serve%20warm%20optionally%20dusting%20with%20powdered%20sugar.%3C/p%3E%3Cp%3EYum%20one%20as%20I%20had%20mentioned%20earlier.%20The%20dates%20make%20it%20sweet%20and%20the%20cumin%20adds%20a%20bite.%20umm.%3C/p%3E%3Cp%3ELet%20me%20munch%20on..%20while%20you%20take%20a%20look%20at%20komaj%20baked%20by%20others%20at%20Aparna's.%3C/p%3E%3Cp%3EPsst..%20She%20also%20had%20a%20packet%20of%20dates%20peeping%20out%20of%20fridge..%20anyway%20we%20can%20say%20thanks%20to%20komaj,%20dates%20ke%20acche%20din%20aaye%20hain!%3C/p%3E){kind=link}
