Khubani is an Urdu word which stands for apricots. 'Kubani pudding' somewhat looks like Indian kheer and also resembles its taste. Khubani kheer is a traditional dessert of the Muslims and is made on most of their occasions. It is very famous in North-India and has got its other versions too. But here we have made a pudding of it. It contains apricots (khubani), bread crumbs, sugar, milk, thick cream and dry fruits. This contemporary pudding contains bread crumbs and thick cream which are not used in 'khubani-kheer'. Instead of dry fruits, you can also use cherries and pineapples to decorate it. The secret of this mouth-watering dessert pudding lies in the grated apricots used in it. Khubani apricots are subtly different from common apricots. You can also use dried khubani (moti kishmish) to make it more traditional.
