This is a popular dish in India and usually, is given to babies when they start having solid food, so yes this is a toddler food but there are two versions, one for toddlers which is mild in has almost no spices and the adult version which I’m sharing today.Making Healthy KhichdiThe way to cook khichdi and its ingredients changes depending on which part of India you are in. In fact, almost every family has its own favorite version. It is easy to add and omit ingredients from this dish, but the main two ingredients are always rice and lentils.There are many different types of lentils and rice and you can use any according to your choice. Full of nutrients and easy on the stomach, that’s why it is given to babies as soon as they are ready for solid food.Make Khichdi in Pressure Cooker and Regular PanIn this post, I am going to show you how to make the khichdi using a pressure cooker and cooking it in a regular pan. Of course, using pressure cooker will save a lot of time but I can understand that not everyone is fond of it.This dish can turn into a delicious vegan delight by omitting the Ghee and using any cooking oil instead. I never liked coconut oil in khichdi but go with what you like. Let me add that Khichdi usually has a rice pudding like texture but some (like me) like it a little dry! More Indian Vegetarian Dishes?CHANA DALPALAK PANEERDAL MAKHNICREMY SPINACH LENTILSBAKED ALOO SAMOSALet’s Make KhichdiKhichdi Rice Lentil Vegetarian Dish  Save PrintAuthor: Muna KennyIngredients1 cup basmati rice⅓ cup masoor dal2 leveled teaspoon salt2 green chili minced or finely chopped1 large onion chopped1 large tomato chopped1 teaspoon cumin powder1 teaspoon turmeric powder1 teaspoon curry powder3 tablespoon ghee or oil1 ¾ cup water (if using pressure cooker) or 2 ¼ cup water (if cooking in regular pan)InstructionsUSING PRESSURE COOKER:Wash rice and dal together for four times and soak in water for at least 10 minutes. Keep aside.In the pressure cooker, add the ghee and when hot add the onion and tomato and stir until the onion is translucent and the ghee separate from tomato and onion mixture.Add all the spices and salt, stir for one minute, now add the rice and dal and stir for few seconds then pour 1 ¾ cup water.Close the pressure cooker and cook the khichdi on high, after hearing the first whistle turn off the heat and allow the steam to be released naturally since this will allow the khichri further.USING REGULAR PAN:Wash rice and dal together for four times and soak in water for at least 10 minutes. Keep aside.In the pressure cooker, add the ghee and when hot add the onion and tomato and stir until the onion is translucent and the ghee separate from tomato and onion mixture.Add all the spices and salt, stir for one minute.Now add the 2 ¼ cup water and let it come to a boil. Add the rice and dal and stir for few seconds. Let it come to a boil again, then turn the heat to lowest, cover tightly, and let it cook for 15 minutes.Uncover the pan, stir the khichri, cover again and let it cook for another 17 minutes.
