Deep fry the Badi in oil and keep it aside. (1)

Heat a Tbsp of oil in a pan and caramelize the onions. Keep this too aside. (2)

In a bowl, mix the butter milk, red chilli powder, turmeric powder, grated ginger and salt. Add the gram flour little by little and whisk it well without forming any lumps. (3)

Heat oil in a pan over medium heat and add the cumin seeds. Once they splutter, add curry leaves, red chillies and fenugreek seeds.

Once they start to brown, add the gram flour mixture and stir it. Be careful not to burn your hand as the mixture might bubble and splutter. Simmer it for 10-15 minutes and turn off the stove.

Add the fried Badi half an hour before serving. So that it does not become too soggy and at the same time it absorbs some of the flavour. Add the fried onions just before serving.
