  • 1 pkg. lemon cake mix
  • 1 (3 ounce) pkg. lemon instant pudding and filling mix
  • 4 large eggs
  • 1 c. oil
  • 3/4 c. water
  • 1/4 c. lime juice
  • 2 1/4 c. powdered sugar, divided
  • 1/3 c. lime juice
  • 2 T water
  • 3 T butter, melted
  • Lime slices for garnish or possibly fresh strawberries

  1. Preheat oven at 350 degrees. Grease and flour 10 inch Bundt pan. For cake, put together cake mix, pudding mix, large eggs, water, oil and 1/4 cup lime juice in large bowl. Beat at medium speed with mixer for 2 min. Pour into pan. Bake 50-60 min or possibly till tests done. Cool 25 min in pan. Invert cake onto cooling rack and remove pan. Poke holes in the warm cake with toothpick or possibly long-tined fork.For glaze, put together 2 cups powdered sugar, 1/3 cup lime juice, 2 tbsp water and melted butter in medium bowl. Pour slowly over top of warm cake. Cool completely. Invert onto serving plate. Dust with remaining powdered sugar and garnish as desired.
