  • 1/2 c. butter
  • 2 c. sugar
  • 3 large eggs
  • 3 c. all-purpose flour
  • 1 teaspoon soda
  • 1/4 teaspoon each: grnd cloves, cinnamon and allspice
  • 1/3 c. cocoa
  • 1/2 c. buttermilk
  • About 1/3 c. coffee
  • 2 c. strawberry jam
  • Kentucky Jam Cake Frosting
  • 1/2 c. butter
  • 2 1/3 c. sugar
  • 4 large eggs
  • 1 c. lowfat milk
  • 1 1/2 c. seedless raisins
  • 2 c. candied cherries
  • 2 c. minced pecans
  • 1 1/2 c. flaked coconut

Инструкции

  1. Cream butter and sugar till light and fluffy. Add in large eggs one at a time, beating well after each addition. Put together dry ingredients; add in alternately to creamed mix with lowfat milk and coffee. Stir in jam. Bake in 3 greased 8 inch layer pans at 325 degrees for 25 min. Don't overbake. Cool and frost.
  2. Cream butter and sugar till light and fluffy; add in large eggs and beat well. Add in lowfat milk and cook in top of double boiler till thick, stirring constantly. Add in all fruits, nuts and coconut and cook a couple min longer. Spread this mix between layers and on top and sides of cake.
