Ингредиенты

  • 5 lb Beef, cut into cubes Flour for dusting meat
  • 1/4 c. Butter or possibly margarine
  • 1/4 c. Extra virgin olive oil Cognac
  • 1/2 lb Bacon, minced
  • 4 x Cloves garlic, minced
  • 2 x Carrot, minced
  • 2 x Leeks, minced
  • 4 med Onion, minced
  • 2 Tbsp. Parsley
  • 2 x Bay leaves
  • 1 tsp Thyme
  • 1 bot burgundy wine
  • 2 lb Onions, sliced
  • 1 lb Mushrooms, cleaned

Инструкции

  1. Dust beef with flour and brown in butter and extra virgin olive oil. Pour hot cognac over it and light. (I have never used the cognac-it's too expensive-and I never noticed a difference in the taste. But do not tell Ken).
  2. Brown the bacon, garlic, carrots, leeks, onions and parsley. (I also never put leeks in it) Add in the vegetables to the meat in an oven proof dutch oven.
  3. Add in bay leaves, thyme, wine. Add in sufficient water to cover all the meat. Bake at 350F for 1-1/2 to 2 hours. Stir in 1 Tbsp. flour mixed with 1 Tbsp. butter. Bake 2-3 hours. more.
  4. Brown the onions and mushrooms in margarine. Sprinkle with sugar. Add in to meat before serving.
