2 cups (480 ml) rice of your choice (I use basmati or Uncle Ben's) .

4 cups of chicken stock (instead of plain water)

4 slices of cooked bacon (cut-up) and it's bacon fat.

2 pieces of cooked chicken or ham or any leftover cooked meat.

1/4 cup green olives stuffed with red pimiento (leave whole or cut in half)

1 small or 1/2 medium white onion (finely diced)

1 small sweet red pepper (finely diced) or 1/2 small hot red pepper (finely diced) if you like your rice spicy

1 leek, cleaned, finely chopped (optional)

1 or 2 green onions, finely chopped

Salt and pepper to taste
