Karamani Garlic Rice Recipe
Ingredients:
- Raw Rice – 2 cups
- Dried Karamani (Cowpeas/Black Eyed Peas) – 1/4 cup, soaked in water for 15 to 30 minutes
- Green Karamani – 50 gms, long, chopped into 1 inch pieces
- Small Onions – 10, sliced
- Garlic – 10 cloves, peeled, chopped
- Tomato – 1, chopped
- Capsicum – 1/2
- Red Chilli Powder – 1 tsp
- Oil – 1/4 tblsp
- Ginger – 1/2 inch piece, peeled, finely chopped
- Coriander Leaves – little
- Salt as per taste
Method:
1. Dry roast the rice for a minute.
2. Heat oil in a pressure cooker.
3. Add the garlic, onions, capsicums and saute well for a minute or two.
4. Add the chopped karamani and saute for a minute.
5. Add red chilli powder, tomatoes, ginger and 3 cups of water.
6. Add salt, rice, dried karamani and mix well.
7. Pressure cook until 1 whistle.
8. Garnish with coriander leaves.
9. Serve hot with raita.
