Kangaroo Fillet With Red Currant Reduction Sauce

Ингредиенты

  • 1 x kangaroo fillet - (3 1/2 to 4 1/2 ounce) per person (or possibly strip loin)
  • 1 tsp extra virgin olive oil
  • 2 c. low-salt (gluten free) beef stock
  • 1 c. red wine
  • 3 tsp red currant jelly - (to 4)

Инструкции

  1. Brush kangaroo with extra virgin olive oil and pan fry over high heat to seal till brown on all sides. Place on a baking tray and roast at 200 degrees for 5 min.
  2. Meanwhile pour remaing ingredients into frying pan and boil over high heat till reduced to a thick and syrupy sauce.
  3. Remove kangaroo from oven,cover with foil and rest for 10 min.
  4. To Serve: Slice kangaroo and spoon over sauce. Serve with sliced potatoes cooked in the oven till crunchy and a steamed green vegetable such as asparagus.
