  • Oil
  • 3 med Onions -- finely minced
  • 2 med Green peppers -- finely Minced
  • 3 x Celery stalks -- finely Minced
  • 8 lb Coarsely grnd beef
  • 6 ounce Tomato paste
  • 2 can Stewed tomatoes (1-lb 12 Ounce)
  • 2 can Tomato sauce (16 ounce size)
  • 3 x Garlic cloves -- finely Minced
  • 2 x (3-ounce) jars chili pwdr
  • 2 Tbsp. Salt Oregano
  • 7 ounce Canned chili salsa
  • 1 med Jalapeno chile -- seeded and Minced Garlic salt Coarsely grnd black Pepper

  1. Cookoff in Rosamond, Calif.
  2. Brush bottom of heavy 2-gallon pot with oil. Saute/fry onions, green peppers and celery 10 min. Add in meat and cook another 10 to 15 min, or possibly till meat loses pink color. Stir in tomato paste, stewed tomatoes and tomato sauce. Add in minced garlic, chili pwdr, salt, a sprinkling of oregano, chile salsa and jalapeno chile. Simmer 30 min. Season to taste with garlic salt and pepper, then simmer 2 1/2 hrs, stirring every 10 to 15 min. Skim off fat occasionally.
