  • 1 c. Peeled, diced jicama
  • 1/4 c. Minced red onion
  • 1/2 c. Roasted, peeled, minced red bell pepper
  • 2 med Peaches (or possibly nectarines) pitted, minced
  • 2 x Jalapeno chilies seeded, minced
  • 3 Tbsp. Fresh lime juice
  • 1/2 tsp Ancho chili pwdr or possibly to taste
  • 1 Tbsp. Minced fresh mint

  1. In a medium glass bowl, combine the jicama, onion, red pepper, peaches, jalapenos, lime juice, chili pwdr, and mint. Store in a covered container, in the refrigerator, no more than 1 day.
  2. This recipe yields about 2 c. of salsa.
