Street foods are iconic to Indian cuisine. They make the most exciting evening snacks after a long day at either work or school. Today's recipe is a very simple no-cook snack, that is packed with robust flavours and makes your mouth pucker.
For the second day of BM, it is Jhal Muri, one of the popular Kolkata street snacks, under the theme "Evening Tiffins".
Jhal Muri | Puffed Rice snack
Crunchy Puffed rice with roasted peanuts, raw onions and cucumber and spiced with cumin and a dash of lime juice.
Prep Time: 10 Mins | Cook Time: ~5 Mins | Total Time: 15 Mins | Serves: 3-4
Ingredients
- 4 Cups Puffed Rice
- 1/2 to 3/4 Cup finely chopped Onion
- 1/4 Cup Chopped Tomatoes
- 1/4 Cup chopped Cucumber
- 2-3 Green chillies, finely chopped
- 1/2 Cup Roasted peanuts
- 1/2 tsp Roasted cumin powder
- 1/2 tsp or more Chaat masala (optional)
- 1 tsp Red Chilli powder
- A pinch Black salt
- 2-3 Tbsp Fine Sev
- Lime Juice as needed
- Salt to taste

Instructions
Prep Work
Roast the puffed rice in a pan (w/o oil) until it turns slightly brown and crisped. Roast the peanuts and keep aside.
Preparation
Mix all the other ingredients in a bowl. Just before serving, add the puffed rice, squeeze lemon juice, garnish it with coriander leaves.
Mix it well and check for salt, adjust if needed.
Serve it immediately.
Notes
This is not a make ahead snack. The puffed rice will become soggy if it is kept for a longer time.
