Marinating meats with fruit juices and spices is a wonderful way to flavor inexpensive cuts of meats while also tenderizing them. In addition, unlike adding barbecue sauce, it doesn’t add a lot of unwanted calories from sugar either.
That’s why I love using 100% Florida Orange Juice in my marinades like my Best Carne Asada Recipe Ever. I also like using 100% Florida OJ in everything from desserts, like my Sugar Free& Dairy Free Orange Coconut Popsicles to appetizers like Turkey Orange Meatballs.
Florida Orange Juice is also super healthy. One 8-ounce glass of Florida OJ is an excellent source of vitamin C, folate, thiamin and potassium. And if I have leftover orange juice from a recipe, there’s never a problem using it up. Either the kids drink it quickly or I make a mocktail out of it for myself.
Tailgating with 100% Florida Orange Juice
What I love about this marinade recipe is that you put the chicken on the skewers before you marinade it. If you’re using bamboo skewers, this soaks the skewers so they don’t burn while you’re grilling. (You can see the entire chicken skewers recipe here at FloridaCitrus.org. In their version, they combine the chicken with chutney and fried plantains, so it’s worth checking out!)
You can serve these chicken skewers as a snack or party appetizer by cooking the chicken on thin, cocktail skewers and serving them with a spicy yogurt dip. Or make them into a meal by putting them on thicker skewers and serving them over the my original recipe for Orange Roasted Pepper Quinoa. I love adding healthy flavorings like 100% Florida Orange Juice to quinoa to make it extra special and delicious.
Feel free to add more jerk seasoning. (My son and husband felt the chicken could have been spicier.) And did I mention that this dish is perfect for your gluten free guests? Serve it with naturally gluten free cider and you’re all set for tailgating!
Jerk Chicken Skewers & Orange Roasted Pepper Quinoa
Recipe inspired by the Florida Department of Citrus.
Ingredients
- For Jerk Chicken Skewers:
- 3 pounds chicken thighs, cut into 1-inch pieces
- 6 (10 to 12-inch) wooden skewers
- For Florida Orange Juice Marinade:
- 1 cup 100% Florida Orange Juice
- 3 tablespoons lime juice
- 3 tablespoons jerk seasoning
- 3 tablespoons fresh ginger, minced
- For Orange Roasted Pepper Quinoa:
- 1 cup quinoa, rinsed
- 1 cup cup water
- 1 cup 100% Florida Orange Juice
- 1 (16 ounce) jar roasted peppers (any color), diced
- 1/4 teaspoon salt
Directions
For Jerk Chicken Skewers and Florida Orange Juice Marinade:
Thread chicken cubes onto skewers. Place in a non-metallic baking dish.
Prepare Florida Orange Juice marinade by combining all ingredients in bowl. Mix thoroughly.
Pour marinade over chicken skewers. Cover and refrigerate at least 3 hours or preferably overnight.
Remove chicken skewers from marinade and discard marinade.
Grill chicken skewers over medium high heat until cooked through. Serve with Orange Roasted Pepper Quinoa.
For the Orange Roasted Pepper Quinoa:
Place water and Florida Orange juice in a medium saucepan. Bring to boil over high heat. Add quinoa, diced roasted red peppers, and salt to the saucepan.
Bring quinoa back to a boil and reduce heat to low. Cover and cook for 15 minutes or until liquid is absorbed.
Remove from heat. Let sit for 10 minutes. Fluff with a spoon and serve.
Prep Time: 30 Minutes
Cook Time: 7 Minutes
Total Time: 37 Minutes
Servings: 6 skewers (1/2 pound of chicken per person)
Serving size: 1 skewer plus 1/6 of quinoa
Winning with Florida OJ New York City Event
Florida Orange Juice held Winning with Florida OJ New York City Event on August 19th in Herald Square in New York City. Florida native, FOX Sports broadcaster, and ABC's Dancing with the Stars co-host, Erin Andrews was there to talk about the health benefits of 100% Florida OJ. Select a stellar food lineup: Rely on classic tailgate favorites like burgers and brats, but try at least one new dish each time, and a health-conscious one, too. Incorporate recipes with bright, fresh flavors, like a citrus glaze for grilled cedar plank salmon or a spinach salad tossed in a 100% Florida Orange Juice and balsamic vinegar dressing.
Don't forget to have fun: Remember to relax and spend time with guests. Have a friend prepare a tray of citrus-infused beverages: Mimosas! The combination of zesty Florida OJ with a splash of champagne is especially great for early morning tailgates.
