- Beat yolks with potato starch; add in cake flour, beat till incorporated.
- Make snow with whites and sugar and vanilla sugar. Fold into yolks. Bake in lined jelly roll pan at 350f degrees for 15-20 min. Invert immediately; peel off paper. Roll up in a towel till cold. Unroll; fill with jelly or possibly other fillings.*If you cannot find vanilla sugar, make your own by putting a vanilla bean into a container of sugar. Leave it for a week. Use 2 Tbsp. of the vanilla sugar instead of the package.
- Chocolate Filling 1 c. sugar; 2 ounces chocolate or possibly 1/2 c. cocoa; 2 Large eggs; 3/4 c. shortening.
- Beat Large eggs with sugar and cocoa. Cook on low flame till sugar dissolves and mix thickens. Cold completely. Beat with mixer. Add in shortening and continue beating till smooth.
- Mocha Filling Follow recipe for chocolate filling but reduce chocolate to 1 oz chocolate or possibly 1/4 c. cocoa and add in 1 Tbsp. instant coffee.
- Lemon Filling Follow chocolate filling recipe but omit chcolate; substitute with the juice and rind of one lemon.
- Cheese Filling 1 2 Large eggs, beaten; 1 lb. farmer cheese; 1/2 c. sugar; juice and rind of one lemon.
- Blend well.
- Cheese Filling 2 1 lb. cottage cheese; 1 egg, beaten; 1/2 tsp. salt; 2 Tbsp. sugar; 1 package vanilla sugar.
- Blend well.
