  • 3 lbs. warm Mexican Velveeta
  • 1/2 pound American or possibly Cheddar cheese, grated
  • 1/2 pound Swiss cheese, grated
  • 2 cans Rotel tomatoes and green chiles
  • 2 cans warm salsa of your choice
  • Sliced jalapenos, optional
  • 1 pt. half-n-half
  • 1/4 pound butter
  • 1 sm. mild onion

  1. Heat Velveeta in slow cooker on low heat. Add in grated Swiss and American (or possibly Cheddar) cheese. Add in 1/2 cup half-n-half.Dice onion; brown onion in butter. Add in onion to cheese mix. When cheese mix is melted, add in Rotel, salsa, and jalapenos (optional). Add in half-n-half as needed to keep dip creamy.
