Рецепт Jalapeno and Cheddar Cauliflower Bites

If you haven’t read my earlier post this week, the Cabot Creamery is challenging the Recipe Redux Members to create a healthier game day snack. Since Cabot Creamery was so generous with their samples, I had to share more than one cheese recipe this week. Today’s recipe is Jalapeno and Cauliflower Cheddar Bites.
Cabot cheese has always been my cheese of choice, and I learned recently that Cabot Creamery is a family-farmer owned cooperative of more than 1200 farms located throughout New England and New York. Additionally 100% of their profits go back to their farmers. But I did know that Cabot Cheddar Cheese is a protein rich snack and is naturally lactose free which is a huge plus for those with lactose intolerance.
Cauliflower used to be a boring vegetable ~ that is until recently. Now it seems that cauliflower is used in more ways than I realized were possible. . . Buffalo cauliflower, cauliflower steaks, pizza crust, mashed, rice. And they all are delicious!
For this recipe, I used the White Oak Cheddar from the Farmer’s Legacy Collection, and it was the perfect choice. It has a creamy texture, melted nicely, and its sharp flavor went well with the jalapeno pepper.
This recipe doesn’t have a lot of ingredients, but it does take some time.
Chop and steam the cauliflower, and then mash it into little bits.
Cool the mixture before it is rolled into bite sized balls. . .

Jalapeno and Cauliflower Cheddar Bites
INGREDIENTS
- 1 medium head of cauliflower
- 1 1/2 tablespoon olive oil
- 1/2 cup chopped onion
- 2 cloves of garlic, diced
- 1 egg
- 1 jalapeno pepper diced
- 1 cup of Cabot Creamery Farmer's Legacy Collection - White Oak Cheddar Cheese
- 3/4 whole wheat panko bread crumbsINSTRUCTIONS
- Clean, chop and steam cauliflower until it becomes tender (about 20 minutes)
- While cauliflower is steaming, add 1/2 tablespoons of oil to the pan and cook the onions and garlic over medium heat until they begin to soften.
- Turn off heat and set aside
- Drain steamed cauliflower and mash with potato masher until it crumbles into the texture of rice
- Stir in the onions and garlic and set aside to cool
- Once cool add the jalapeno, cheese and egg and mix well
- Place mixture in refrigerator and cool for at least one hour
- Line a baking sheet with parchment paper and rub the remaining oil over the parchment paper set aside
- Remove mixture from refrigerator and roll into balls about 3/4 inch in diameter
- Roll in bread crumbs and place on baking sheet lined with parchment paper
Place in oven and bake at 425 for 15 minutes remove from oven and turn and bake for another 10 to 15 minutes until the crumbs begin to brown.
