- 6 med. potatoes, cooked & mashed
- 1/2 c. grated Parmesan cheese
- 4 egg yolks
- Salt & pepper to taste
- 1 c. flour (about)

- Peel potatoes while still hot. Mix all ingredients except flour. Add in as much flour as needed to make a dough which will roll. Mix well, then roll on a lightly floured board into a rope about 1/2" thick. Cut into 1" pcs. Drop gnocchi into rapidly boiling, salted water and cook about 5 min. Gnocchi will come to the surface when cooked. Remove from water with a strainer and place on serving dish. Pour rich meat sauce on top. Sprinkle with 1/4 cup grated Parmesan cheese.
