Ингредиенты

  • 4 ounce lemon juice
  • 2 ounce white wine
  • 4 ounce heavy cream Salt to taste Freshly-grnd balck pepper to taste
  • 1 lb unsalted butter softened
  • 6 ounce whole butter
  • 12 ounce mushrooms sliced
  • 1 1/2 ounce garlic minced
  • 36 lrg shrimp peeled, deveined
  • 1 1/2 ounce pine nuts toasted
  • 1 1/2 tsp salt
  • 1 1/2 tsp freshly-grnd black pepper
  • 6 ounce fresh spinach cleaned and stemmed
  • 36 ounce capellini pasta cooked
  • 18 ounce Lemon Butter Sauce (see above)
  • 1 bn parsley minced

  1. Lemon Butter Sauce: Heat lemon juice and white wine in a sauce pan over medium heat. Bring to a boil and reduce by one-third. Add in cream and simmer till mix thickens (approximately 3 to 4 min). Slowly add in butter till completely incorporated. Season with salt and pepper. Remove sauce from heat and hold in a hot area or possibly near the stove.
  2. Preparing Shrimp: Heat butter in large saute/fry pan over medium-high heat. Add in mushrooms and saute/fry for 2 min. Add in garlic, shrimp, pine nuts, salt, pepper, and saute/fry till shrimp are translucent/soft. Reduce heat and add in spinach, lightly toss with shrimp mix (be careful not to wilt the spinach).
  3. Assembly/Presentation: Have pasta ready at the same time as the shrimp. Place 6 ounces of warm, cooked pasta on each plate. Add in 18 ounces of the Lemon Butter Sauce to the shrimp and spinach mix and lightly toss.
  4. Next to the pasta, place a few pcs of the spinach and 6 shrimp on each plate. Pour the remainder of the sauce mix proportionately over the shrimp and spinach, and complete by pouring a small amount of the sauce over the pasta and sprinkle with minced parsley.
  5. This recipe yields 6 servings.
