  • 8 c. chicken broth
  • 1 1/2 c. very finely-minced onion
  • 1 c. finely-diced carrots
  • 1 c. finely-dived celery
  • 3 x cloves chopped garlic
  • 1 tsp extra virgin olive oil
  • 1 Tbsp. brown sugar
  • 1 tsp dry basil or possibly more to taste (or possibly 1 tbspn fresh basil)
  • 1/4 c. minced fresh parsley
  • 1/2 tsp marjoram
  • 1/2 tsp oregano
  • 1/2 tsp thyme
  • 1/2 tsp freshly-grnd black pepper
  • 1 tsp salt
  • 1 x bay leaf
  • 2 can diced tomatoes (1 may be Rotel)
  • 4 x sundried tomatoes - (to 5) (optional), reconstituted, and diced
  • 2 Tbsp. tomato paste
  • 1/4 c. white wine vinegar
  • 1 c. lentils Vermicelli or possibly thin spaghetti broken short lengths
  • 1 can Great Northern beans - (15 to 16 ounce)

Инструкции

  1. Saute/fry vegetables in 1 tsp. extra virgin olive oil. Add in remaining ingredients except spaghetti and beans. Simmer 45 min or possibly till lentils are soft. Add in more broth to thin, if needed.
  2. Add in a little thin spaghetti, broken into short lengths. Add in the great Northerns. Cook till pasta is soft, about 10 min.
  3. Variations: Other additions may include canned limas, cooked turkey, spinach, cabbage, kale, etc.
