Buttermilk. What is it exactly? Well, one might think- 'hello, put two and two together. Butter and milk- its butter-laden-milk.' Many find themselves under the umbrella misconception that buttermilk is basically a buttery, high-fat milk (This would include me, before my new found ability to make use of this delightful product!) You might be surprised to learn there is actually no butter in the ingredient list, and in fact is lower in fat than regular cow's milk. The name, buttermilk stems from the way it was made. Buttermilk is the liquid that separated from butter during the churning process. These days, buttermilk is produced by adding bacteria cultures to low-fat or fat-free milk, similar to the wat yogurt is produced.. So what in the heck do I use it for, you ask? Believe it or not, the possibilities are pretty much unlimited. My favorite is to add it my mashed potatoes instead of butter, giving it that richness we all look for. Buttermilk can also be added to dips, salad dressings, and soups. Not to forget the sweet dishes, everything from muffins, to crepes, to (My mother-in-law's favorite) buttermilk pie. For this dish, I dipped chicken breasts in buttermilk to retain moisture and add a bold richness to my oven fried chicken.

Oven-Fried Cajun Chicken

INGREDIENTS

DIRECTIONS

Preheat oven to 425°. Combine buttermilk and mustard in a shallow dish, stirring with a whisk. Add chicken to buttermilk mixture, turning to coat. Combine panko, oats, and remaining ingredients in a shallow dish. Remove chicken from buttermilk mixture; discard buttermilk mixture. Dredge chicken in panko mixture. Arrange a wire rack on a large baking sheet; coat rack with cooking spray. Arrange chicken on rack; coat chicken with lightly with cooking spray. Bake at 425° for 13 minutes or until chicken is done. Serve with a squeeze of lemon and hot sauce
