%20would%20sit%20down%20to%20dinner%20and%20make%20a%20meal%20of%20a%20large%20pot%20of%20thick%20soup%20and%20some%20bread.%20It%20was%20delicious,%20filling%20and%20warmed%20the%20tummy.%3C/p%3E%3Cp%3EWhen%20Tom%20and%20I%20married%20over%2040%20years%20ago%20(41%20years%20on%20the%2019th%20of%20this%20month,%20thank%20you%20very%20much),%20the%20only%20type%20of%20soup%20I%20knew%20how%20to%20make%20was%20thick%20and%20hearty,%20made%20with%20beans,%20potatoes,%20rice%20or%20noodles%20~%20anything%20to%20thicken%20the%20broth.%20The%20first%20time%20I%20sat%20down%20to%20a%20meal%20of%20soup%20at%20my%20in-laws,%20I%20thought%20I%20might%20come%20away%20from%20the%20table%20still%20hungry.%20The%20soup%20pot%20was%20filled%20with%20a%20thin%20beefy%20broth,%20a%20few%20pieces%20of%20meat,%20some%20chopped%20vegetables%20and%20homemade%20%22noodles.%22%20It%20filled%20me%20up,%20but%20it%20was%20nothing%20like%20I%20was%20used%20to.%3C/p%3E%3Cp%3EAlthough%20I%20now%20appreciate%20a%20nice%20brothy%20soup,%20I%20still%20gravitate%20towards%20thick,%20hearty%20and%20flavorful.%20My%20favorites%20are%20clam%20or%20seafood%20chowder,%20bean%20soup,%20wild%20mushroom%20soup%20and%20the%20Tuscan%20soup%20my%20sister,%20Karen,%20introduced%20to%20us%20when%20she%20lived%20with%20us%20earlier%20this%20year.%20This%20is%20Karen's%20favorite%20soup,%20her%20rendition%20of%20a%20soup%20she%20had%20while%20living%20in%20Las%20Vegas.%3C/p%3E%3Cp%3EAlthough%20I%20really%20liked%20her%20soup...you%20know%20me,%20I%20cannot%20leave%20well%20enough%20alone.%20I%20had%20to%20doctor%20it%20up%20with%20some%20herbs%20and%20spices%20to%20suit%20my%20palate.%20I%20have%20also%20made%20the%20soup%20using%20two%20different%20methods%20to%20cook%20the%20Italian%20sausage:%201)cooking%20the%20sausage%20with%20casings%20on,%20then%20slicing%20it,%20or%20(2)%20removing%20the%20casings%20before%20cooking%20the%20sausage%20and%20breaking%20it%20into%20chunks%20as%20it%20cooks%20(much%20like%20cooking%20hamburger).%20I%20like%20either%20method,%20but%20I'm%20lazy%20and%20often%20use%20method%20%232%20because%20it%20takes%20the%20slicing%20step%20out%20of%20the%20recipe.%20The%20photo%20is%20of%20the%20soup%20using%20method%20%232.%3C/p%3E%3Cp%3ETuscan%20Soup%3C/p%3E%3Cp%3Eby%20Terri%20Powers%20(adapted%20from%20my%20sister,%20Karen's%20recipe)%3C/p%3E%3Cp%3EIn%20a%20large%20pot%20or%20dutch%20oven,%20add%20a%20couple%20of%20tablespoons%20of%20olive%20oil%20and%20(Method%20%231)cook%20the%20Italian%20sausage%20links%20until%20cooked%20through,%20about%206%20or%207%20minutes.%20Remove%20the%20sausages%20from%20the%20pot%20to%20a%20plate%20and%20allow%20to%20cool%20slightly.%20~%20OR%20~%20(Method%20%232)%20Remove%20the%20sausage%20from%20the%20casings%20and%20cook%20the%20sausage%20meat,%20breaking%20up%20with%20a%20fork,%20until%20cooked%20through.%20Remove%20from%20the%20pot%20to%20a%20plate%20or%20bowl.%3C/p%3E%3Cp%3EAdd%20the%20bacon%20to%20the%20pot%20(with%20the%20drippings)%20and%20cook%20until%20done,%20but%20not%20too%20crisp.%3C/p%3E%3Cp%3EAdd%20the%20onion%20to%20the%20pot%20with%20the%20bacon%20pieces%20and%20saute%20until%20the%20onion%20is%20translucent,%20about%203%20or%204%20minutes.%3C/p%3E%3Cp%3EAdd%20the%20garlic,%20fennel%20bulb,%20potatoes%20and%20spices%20to%20the%20pot%20and%20cook%20for%20about%203%20or%204%20minutes%20until%20the%20mixture%20is%20fragrant%20and%20hot.%3C/p%3E%3Cp%3EAdd%20the%20chicken%20broth%20to%20the%20pot%20and%20bring%20just%20to%20a%20boil,%20then%20reduce%20the%20heat%20to%20a%20simmer.%3C/p%3E%3Cp%3EIf%20you%20have%20used%20Method%20%231%20to%20cook%20the%20sausage,%20slice%20it%20now%20into%20approximatey%201/4%20inch%20slices%20and%20add%20back%20to%20the%20pot%20and%20mix%20well.%20If%20you%20have%20used%20Method%20%232%20to%20cook%20the%20sausage,%20add%20it%20back%20into%20the%20pot%20and%20mix%20well.%3C/p%3E%3Cp%3ESimmer%20the%20soup%20until%20the%20potatoes%20are%20almost%20soft%20enough%20to%20pierce%20with%20a%20fork,%20then%20add%20the%20kale%20and%20the%20cream.%20Bring%20back%20to%20a%20simmer%20and%20cook%20for%20about%205%20or%206%20minutes%20longer.%20Season%20with%20salt%20and%20pepper%20to%20taste.%3C/p%3E%3Cp%3EServe%20with%20hot%20with%20a%20crusty%20bread.%3C/p%3E){kind=link}
