- 6 Tbs unsweetened cocoa powder. (once again use the best cocoa you can get your mitts on, trust me it 's worth it.)
- 2 1/4 cups of flour
- 3/4 cup blanched pistachios
- zest of 1 orange

%20I'm%20talking%20hardcore%20Christmas%20cookies.%20The%20ones%20shaped%20like%20things,%20covered%20with%20neon%20bright%20boiled%20frosting%20and%20studded%20with%20stuff%20that%20doesn't%20look%20like%20it%20should%20be%20edible,%20but%20is.%3C/p%3E%3Cp%3EI%20grew%20up%20in%20a%20house%20where%20Christmas%20was%20always%20marked%20by%20the%20Italian%20version%20of%20fruitcake...%20Pannetone.%3C/p%3E%3Cp%3EOne%20had%20to%20be%20careful%20about%20those%20as%20the%20cheaper%20relatives%20were%20known%20to%20keep%20these%20things%20in%20the%20box%20and%20just%20regift%20it%20next%20year.%3C/p%3E%3Cp%3EUnlike%20fruticake%20they%20don't%20get%20better%20with%20age.%3C/p%3E%3Cp%3EThere%20are%20a%20few%20other%20%22unique%22%20traditions.%20When%20other%20kids%20were%20singing%20about%20Rudolph%20the%20Red-Nosed%20Reindeer%20we%20had%20something%20else%20to%20sing%20about.%20Yeah%20really.%3C/p%3E%3Cp%3ESooooo....%20after%20all%20that,%20it's%20kind%20of%20hard%20to%20roll%20out%20reindeer%20Christmas%20cookies%20if%20you%20get%20my%20drift.%20We're%20doing%20a%20lot%20of%20entertaining%20in%20the%20new%20house%20house%20this%20winter%20and%20it%20struck%20me%20that%20it%20might%20be%20time%20to%20get%20into%20cookie%20making.%20Cookies%20are%20notoriously%20fast,%20easy%20and%20I%20remember%20hearing%20someplace%20a%20long%20time%20ago%20that%20they%20could%20be%20made%20ahead,%20stored%20in%20the%20freezer%20or%20fridge%20and%20just%20rolled%20out%20and%20baked.%20Sounded%20good%20to%20me.%20With%20all%20the%20stuff%20going%20on,%20anything%20with%20the%20word%20ahead%20in%20it,%20was%20an%20absolute%20must.%20Remarkably%20I%20found%20a%20few%20totally%20elegant%20cookie%20recipes%20in%20this%20book.%3C/p%3E%3Cp%3EThe%20flavors%20are%20subtle,%20they're%20easy%20to%20make,%20and%20like%20I%20said.....ahead,%20ahead.%20ahead!!%3C/p%3E%3Cp%3EChocolate%20Pistachio%20Orange%20Cookies%3C/p%3E%3Cp%3EHere's%20What%20You%20Need:%3C/p%3E%3Cp%3E1%20cup%20of%20unsalted%20butter%20.%20(I%20use%20grass%20fed%20pastured%20butter%20in%20my%20cooking,%20and%20especially%20when%20making%20European%20recipes%20such%20as%20these,%20I%20think%20it%20helps%20to%20get%20as%20close%20to%20the%20ingredients%20that%20would%20be%20used%20there,%20here.)%3C/p%3E%3Cp%3EHere's%20What%20To%20Do:%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20or%20a%20stand%20mixer%20mix%20together%20the%20butter...%3C/p%3E%3Cp%3E...sugar...%3C/p%3E%3Cp%3E...and%20salt.%3C/p%3E%3Cp%3EZest%20the%20orange%20and%20set%20it%20aside.%3C/p%3E%3Cp%3ECream%20the%20butter,%20sugar,%20and%20salt%20together%20until%20it's%20light%20and%20fluffy%20then%20add%20in%20the%20egg.%3C/p%3E%3Cp%3EMix%20the%20egg%20in%20well.%20When%20it's%20fully%20incorporated,%20sift%20together%20the%20cocoa%20and%20flour.%3C/p%3E%3Cp%3EAdd%20in%20the%20mixed%20cocoa%20and%20flour...%3C/p%3E%3Cp%3E...and%20the%20orange%20zest.%3C/p%3E%3Cp%3EWhen%20it's%20blended%20together,%20fold%20in%20the%20pistachios%20by%20hand.%3C/p%3E%3Cp%3EThe%20dough%20is%20stiff,%20so%20%20that's%20why%20you%20want%20to%20add%20the%20pistachios%20by%20hand.%3C/p%3E%3Cp%3EOn%20a%20lightly%20floured%20surface,%20or%20a%20silicone%20mat,%20roll%20the%20dough%20into%20a%20cylinder%20about%2010%20inches%20long%20and%202%20inches%20across.%20I%20broke%20this%20dough%20into%20about%203%20cylinders.%20Some%20for%20baking%20now%20and%20some%20for%20baking%20later.%3C/p%3E%3Cp%3EWrap%20the%20cylinders%20in%20waxed%20paper%20and%20pop%20them%20into%20the%20fridge%20to%20chill.%3C/p%3E%3Cp%3EThey%20can%20stay%20refrigerated%20there%20for%20several%20days%20before%20you%20bake,%20and%20I%20imagine%20one%20could%20also%20freeze%20the%20cylinders%20as%20long%20as%20they're%20tightly%20wrapped%20since%20this%20is%20basically%20a%20butter%20cookie.%3C/p%3E%3Cp%3ESet%20your%20oven%20rack%20to%20the%20upper%20and%20lower%20middle%20positions%20and%20preheat%20it%20to%20375%20degrees.%3C/p%3E%3Cp%3ELine%20a%20couple%20of%20cookie%20sheets%20with%20parchment%20paper,%20or%20silicone%20mats.%3C/p%3E%3Cp%3EWhen%20the%20oven%20is%20up%20to%20speed%20and%20the%20dough%20is%20nice%20and%20firm,%20unwrap%20and%20slice.%3C/p%3E%3Cp%3ENot%20too%20thick%20but%20just%20right.%3C/p%3E%3Cp%3EPut%20the%20sliced%20cookie%20dough%20on%20the%20baking%20sheet%20giving%20them%20enough%20room%20between,%20(about%201%20inch)%20and%20pop%20them%20into%20the%20oven.%3C/p%3E%3Cp%3EBake%20them%20for%20about%2012%20minutes,%20or%20until%20the%20tops%20of%20the%20cookies%20seem%20dry.%3C/p%3E%3Cp%3ETake%20them%20out%20of%20the%20oven,%20off%20the%20cookie%20sheet%20and%20set%20them%20on%20a%20rack%20to%20cool.%3C/p%3E%3Cp%3EWhen%20they're%20nice%20and%20cool%20serve%20them%20up!%3C/p%3E%3Cp%3EThese%20cookies%20are%20amazing,%20and%20the%20orange%20zest%20adds%20just%20the%20right%20note%20of%20contrast%20with%20the%20chocolate.%20Plus%20they%20really,%20really,%20do%20keep%20well%20in%20the%20fridge%20for%20later%20baking.%20I%20found%20this%20out%20because%20I've%20
