%20My%20brain%20immediately%20goes%20into%20food%20blogger%20mode%20and%20I%20start%20brainstorming%20what%20I%20could%20do%20with%20them.%20And%20that's%20when%20mom%20comes%20into%20the%20story.%3C/p%3E%3Cp%3EI%20was%20staring%20at%20them,%20the%20gears%20in%20my%20brain%20turning,%20and%20she%20asked%20what%20I%20was%20doing.%20%22I'm%20trying%20to%20think%20of%20something%20special%20I%20could%20do%20with%20these.%20A%20new%20recipe%20for%20the%20blog.%22%20Here%20comes%20mom's%20infinite%20wisdom...%22Why?%20Do%20something%20simple.%20It%20doesn't%20have%20to%20be%20fancy.%20They%20would%20be%20perfect%20in%20chicken%20noodle%20soup.%22%20Talk%20about%20a%20huge%20%22Duh!!%22%20moment!%20For%20it%20was%20in%20that%20instant%20I%20realized%20I%20had%20never%20blogged%20my%20classic,%20go-to%20chicken%20noodle%20soup%20recipe!%20Sure,%20I%20had%20shared%20my%20Lemon%20Chicken%20Noodle%20Soup%20forever%20ago,%20but%20never%20my%20%22ordinary,%20every%20day%22%20one!%20Sometimes%20you%20just%20need%20a%20little%20perspective;%20and%20in%20my%20life,%20that%20usually%20comes%20from%20mom!%3C/p%3E%3Cp%3ESo,%20here%20it%20is.%20The%20chicken%20noodle%20soup%20recipe%20I've%20been%20making%20since%20we%20were%20first%20married.%20It's%20a%20classic%20in%20our%20house,%20but%20you%20might%20notice%20a%20couple%20nontraditional%20things%20about%20it.%20First%20of%20all,%20I%20don't%20boil%20the%20chicken%20with%20the%20veggies.%20Sure,%20this%20leads%20to%20a%20delicious%20broth,%20but%20for%20me,%20I%20think%20it%20also%20leads%20to%20chicken%20lacking%20in%20flavor.%20Instead,%20I%20roast%20mine,%20locking%20in%20all%20the%20juice%20and%20flavor.%20Secondly,%20I%20start%20my%20veggies%20by%20sauteing%20them.%20Why?%20Two%20reasons%20really.%20One,%20it%20helps%20to%20get%20them%20cooking,%20so%20this%20can%20be%20ready%20as%20soon%20as%20possible.%20And%20two,%20it's%20about%20flavor%20again.%20To%20me,%20veggies%20cooked%20in%20butter%20taste%20a%20whole%20lot%20better%20than%20just%20boiling%20them.%20Sure,%20it's%20an%20extra%20step,%20but%20one%20that%20can%20be%20done%20while%20the%20chicken%20cooks,%20so%20the%20soup%20is%20moving%20forward%20while%20you%20wait!%3C/p%3E%3Cp%3EThis%20is%20a%20classic%20soup%20recipe%20for%20a%20cold%20day,%20or%20perfect%20to%20take%20to%20someone%20who%20is%20under%20the%20weather.%20It's%20one%20of%20those%20soups%20that%20eats%20like%20a%20meal.%20It's%20simple,%20but%20delicious.%20Easy,%20but%20filling.%3C/p%3E%3Cp%3ESee,%20it%20doesn't%20have%20to%20be%20fancy.%20It%20just%20has%20to%20be%20yummy!%3C/p%3E%3Cp%3EPreheat%20oven%20to%20375.%20Line%20a%20baking%20sheet%20with%20foil.%20Drizzle%20chicken%20with%20olive%20oil.%20Season%20with%20salt%20and%20pepper.%20Roast%20for%2030-45%20minutes%20until%20juices%20run%20clear.%20Allow%20to%20slightly%20cool%20and%20shred.%20Set%20aside.%20In%20a%20large%20stock%20pot%20over%20medium%20heat%20melt%20butter.%20Add%20onions,%20carrots,%20and%20celery.%20Saute'%20until%20veggies%20are%20beginning%20to%20soften.%20Add%20chicken%20to%20mixture.%20Season%20with%20garlic%20powder%20and%20thyme.%20Saute'%20for%202%20more%20minutes.%20Add%20broth,%20water%20and%20bouillon%20cubes.%20Stir%20to%20combine.%20Cover%20and%20bring%20to%20a%20boil.%20Reduce%20heat%20and%20simmer%20for%2020%20minutes%20to%20allow%20flavors%20to%20develop%20and%20veggies%20to%20cook%20through.%20Bring%20heat%20back%20up%20to%20a%20hard%20simmer.%20Add%20noodles%20and%20cook%20about%205%20until%20tender.%20Add%20parsley.%20Stir%20and%20serve.%3C/p%3E){kind=link}
