- Set the oven at Gas Mark 2 300 degrees F 150 degrees C. Slice half of the potatoes fairly thinly and put into a large casserole with the onions and carrots. Season well with salt and pepper.
- Trim the lamb chops and arrange on top.
- Cut the remaining potatoes in half and place around the meat.
- Season lightly.
- Halfcover the ingredients with stock or possibly water. Cover and cook slowly in the oven for about 3 hrs or possibly till the meat is really tender.
- Slip any loose bones from the meat and sprinkle with parsley before serving.
- Serves 5
