Irish Bangers and potatoes for St. Patricks Day

Have I told y’all how much I love Trader Joes? Have I told you how broke I am from shopping at Trader Joes? Gosh I love that place, but I don’t leave there without spending at least $100.00 or more on food. Things that I never intended on buying, but felt that I had to have. Yeah, like those chocolate covered coffee beans, which brings me to my St. Patrick’s day post. While I was at Trader Joes, I felt that I had to have these.

While I was at Trader Joes this week with my BFF Debra, we came across Irish Bangers. I was thinking about making Corned Beef in the crock pot for St Patrick’s day post, but thought that is going to be done to death. I should strive to do something different from what everyone else is making.

I was going to go the traditional way and mash my potatoes, but the hubster is not a fan of mashed potatoes, so I roasted them. Yes, I decided to roast everything in one pot. It turned out really good. The potatoes and bangers were crispy on the outside and creamy in the middle.

I do think next time, I will keep a potato or two out for me and mash them. I do love mashed potatoes even if he doesn’t.

Bangers and potatoes

Ingredients:

Directions:

Preheat oven to 450 degrees.

Put the potatoes and bangers in a large casserole dish or baking sheet. Season with Montreal steak seasonings and olive oil. Toss to coat. Roast in the oven until golden and crispy on the outside and tender and cooked in the middle, about 30 minutes.
