Рецепт Iranian Cotlet
This has to be one of my favorite Persian dishes and definitely a comfort food for me. Traditionally made with ground beef and various spices, my mom makes her own version of these cutlets with ground turkey that is crispy on the outside while still being soft on the inside. Makes great leftovers especially if you put it in a pita along with some persian maast-o-khiar (plain yogurt and cucumber) and cilantro. The process is kind of intense but the result is SOOO worth it!!!

- 1 pound ground turkey
- 1 pound of potatoes, mashed ( can also substitute with instant mashed potatoes)
- 2 eggs
- 1 large onion, ground
- salt
- pepper
- 2 tablespoon turmeric powder
- garlic powder
- 1/2 cup Canola oil
- 1 full package of bread crumbs Bread crumbs

- Place turkey into large bowl
- Cut onion in half to make grinding easier
- Grind each half of onion into turkey meat
- Mix together with hands
- Add mashed potatoes to this mixture, mix well with hands
- Crack two eggs into the mixture, again mixing well with your hands
- Add salt, pepper, garlic powder, and turmeric and mix in
- Make medium sized meatball like balls with turkey mixture
- Pat out each ball in between the palms of your hands until you have small oval shaped patties (be careful not to make them so thin that they will break apart)
- Pour out bread crumbs into large plate
- Place each patty into bread crumbs, covering both sides
- Place 1/2 cup of Canola Oil into deep frying pan
- On medium high heat, place patties into oil and cook until each side is golden brown
- Remove patties and place into pyrex baking dish
- Bake patties in oven set at 350 degrees for 10 minutes or until patties are cooked all the way through (they should be crispy on the outside without being crunchy all the way through...hopefully that made sense lol)
