Рецепт Inihaw na Rellenong Pusit (Grilled Stuffed Squid)
One thing I missed about Philippines are the grilled dishes where it is enjoyed almost the whole year round. Popular meats used for grilling are pork, chicken, fish, mussels and squid this is then served with rice alongside green mango salad, grilled eggplant salad, salted duck egg salad or anything similar on banana leaf without utensils.
Ingredients
- 2 pcs large squid, cleaned
- 4 pcs medium size tomatoes, chopped
- 2 pcs medium size onions, chopped
- juice from 2 lemons
- 1/2 cup soy sauce
- 2 tbsp fish sauce
- freshly ground black pepper
- 1/4 cup butter, melted
- salt
- Ingredients (Dipping Sauce)
- 2 pcs birds eye chillies, chopped
- 1/2 cup soy sauce
- juice from 1 lemon
- freshly ground black pepper
- 1 small red onion, finely chopped
- 2 cloves garlic minced
Method
1. In a large container combine lemon juice, soy sauce and freshly ground black pepper. Add the squid and let it marinate for 30 minutes.
2. Combine together tomatoes, onions and fish sauce.
3. Remove squid from the marinade, reserve the marinade then stuff the tomato and onion mixture inside the cavity of the squid, secure ends with a toothpick.
4. Combine reserved marinade with 1/4 cup of melted butter.
5. Prepare a charcoal grill then one it hot grill the squid, baste it continuously with the butter marinade mixture and cook for 5 minutes on each side or until squid is cooked. Do not overcook otherwise it will be tough.
6. Combine all dipping sauce ingredients then place on a small bowl.
7. Place squid on a serving plate, slice crosswise and serve it with the dipping sauce.
