Hello friends! I'm back from my self-imposed little vacation from my blog. To my world of invisible internet friends, one might think that every meal I make is blog worthy. I hate to burst anyone's bubble, but that's just not true.
Every once in a while, I simply lose my cooking mojo, and I resort to making a quick and simple pasta, soup, or some kind of quick skillet dinner. My camera remains shut off, as I try to get something on the table in 30 minutes or less. My husband never complains, knowing that I'll be back to trying out new recipes, photographing them, editing and writing and sharing them with all of you-- after he's eaten them, and given me his honest feedback.

%20%20See%20what%20I%20mean?%20Pressure%20cooking%20is%20a%20real%20time%20saver,%20and%20my%20slow%20cooker%20gets%20a%20little%20lonely--%20though%20I%20still%20use%20it%20on%20occasion.%3C/p%3E%3Cp%3EI%20was%20so%20wrong!%20%20This%20will%20be%20the%20seventh%20recipes%20I've%20made,%20and%20enjoyed,%20from%20this%20book%20(you%20can%20find%20my%20recipe%20index%20here.)%3C/p%3E%3Cp%3EIf%20you've%20ever%20had%20genuine%20Hawaiian%20barbecued%20pork,%20this%20traditionally%20involves%20roasting%20a%20suckling%20pig%20in%20a%20pit%20with%20hot%20rocks,%20banana%20leaves%20and%20kiawe%20wood%20(the%20Hawaiian%20version%20of%20mesquite).%20%20I%20don't%20know%20about%20most%20of%20you,%20but%20this%20is%20a%20lot%20more%20work%20than%20I'm%20willing%20to%20invest!%20%20In%20the%20tradition%20of%20America's%20Test%20Kitchen,%20they%20figured%20out%20a%20way%20to%20adapt%20this%20recipe%20so%20that%20you%20can%20make%20it%20at%20home.%3C/p%3E%3Cp%3EUsing%20a%20boneless%20pork%20butt%20and%20a%20pressure%20cooker%20is%20a%20perfect%20solution%20to%20achieve%20really%20tender%20meat.%20%20From%20start%20to%20finish,%20this%20dinner%20was%20ready%20with%20about%2015%20minutes%20of%20prep%20work,%20and%2060%20minutes%20of%20letting%20the%20pressure%20cooker%20do%20the%20rest%20of%20the%20work.%20%20On%20a%20work%20night,%20this%20is%20a%20blessing!%3C/p%3E%3Cp%3ETo%20mimic%20the%20flavor%20of%20wrapping%20the%20pork%20in%20banana%20leaves,%20green%20tea%20is%20mixed%20with%20salt%20&%20pepper.%3C/p%3E%3Cp%3EMy%20butcher%20tied%20my%20pork%20butt%20roast,%20which%20was%20rubbed%20with%20the%20rub%20mixture.%3C/p%3E%3Cp%3ETo%20mimic%20the%20smoky%20flavor,%20I%20bought%20a%20bottle%20of%20liquid%20smoke.%3C/p%3E%3Cp%3ETo%202%20cups%20water,%20I%20added%201/2%20teaspoon%20of%20liquid%20smoke.%20Then%20I%20set%20the%20pork%20into%20the%20pressure%20cooker,%20locked%20the%20lid%20and%20set%20it%20to%20HIGH%20for%2060%20minutes.%20%20%20That's%20it!%20(Note:%20the%20pressure%20cooker%20said%20to%20cook%20for%2090%20minutes,%20but%20I%20gambled%20and%20reduced%20the%20time%20to%2060%20minutes.)%3C/p%3E%3Cp%3EWhile%20the%20pressure%20cooker%20was%20doing%20the%20work,%20I%20decided%20to%20make%20a%20quick%20fresh%20pineapple-mango%20salsa,%20with%20my%20own%20tried-and-true%20recipe.%3C/p%3E%3Cp%3EOnce%20the%20pressure%20cooker%20beeped,%20I%20did%20a%20natural%20pressure%20release,%20and%20carefully%20opened%20the%20lid.%20%20I%20let%20the%20pork%20roast%20rest,%20loosely%20covered%20in%20foil,%20for%2015%20minutes.%20%20I%20was%20relieved%20to%20see%20that%20my%20gamble%20paid%20off.%20Sixty%20minutes%20of%20pressure%20cooking%20was%20sufficient.%20Whew!%3C/p%3E%3Cp%3EI%20served%20the%20pork%20over%20sticky%20rice%20with%20the%20pineapple-mango%20salsa.%20%20As%20you%20can%20see,%20the%20pork%20is%20fork%20tender.%20Yay!%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20You%20can't%20truly%20compare%20this%20recipe%20to%20genuine%20Hawaiian%20Kalua%20pork.%20%20There%20is%20nothing%20eating%20dinner%20on%20a%20warm%20Hawaiian%20evening,%20hearing%20the%20sound%20of%20the%20tradewinds%20rustling%20through%20palm%20trees,%20Hawaiian%20slack%20key%20music%20and%20the%20beautiful%20ocean%20in%20the%20background%20(which%20we%20have%20been%20blessed%20to%20experience).%20%20However,%20this%20recipe%20stands%20on%20its%20own%20for%20a%20few%20reasons.%20%20For%20one,%20it's%20about%20as%20unfussy%20to%20make%20as%20you%20could%20want.%20%20The%20pork%20is%20super%20tender,%20and%20the%20flavors%20are%20reminiscent%20of%20Hawaii.%3C/p%3E%3Cp%3EI%20did%20see%20that%20America's%20Test%20Kitchen's%20sister%20website%20%22Cook's%20Country%22%3C/p%3E%3Cp%3Emagazines%20(Cook's%20Illustrated,%20included),%20I%20will%20try%20this%20version%3C/p%3E%3Cp%3Eduring%20our%20summer%20months.%20%20On%20a%20rainy,%20cold%20day--%20this%20is%20just%20a%20little%3C/p%3E%3Cp%3Epiece%20of%20the%20Hawaiian%20Islands%20at%20your%20fingertips.%3C/p%3E%3Cp%3EAloha,%3C/p%3E){kind=link}
