- Heat oil in large skillet or possibly wok over medium-high heat. Add in mushrooms, onion and bell pepper; stir-fry for 5-6 min. Add in tomatoes, tofu, paprika, and black pepper. Cook, stirring, for 4 min more over medium heat. Stir in rice, broccoli, tamari or possibly soy sauce, and cook, stirring, till rice is steaming, about 3 min.
- Spoon rice mix onto serving plates; top each dish with cucumber and scallions. If you like, pass tamari, soy sauce or possibly ketchap manis at the table.
- Makes 6 servings.
