I'm not sure what's going on in my head, but it has been hounding me with a pounding headache that won't go away. My guess is, it's work-stress related, or I'm fighting off a cold. Sigh. I had all kinds of weekend plans to get into the pre-fall baking mode-- I'm long overdue to bake bread.
It was not to be, as I spent most of the afternoon in a supine position, trying to relax. But my stomach reminded me that it was hungry.
Headache or not, I need to eat and my sweet husband has very limited culinary skills (with the exception of his Weber grilling skills-- and he rocks with that). .%20So,%20when%20I%20want%20to%20make%20something%20fast,%20it's%20usually%20pasta.%20I%20always%20have%20pasta%20on%20hand,%20and%20so%20I%20decided%20to%20make%20Ina%20Garten's%20Spaghetti%20Aglio%20e%20Olio,%20from%20her%20cookbook%20%22How%20Easy%20Is%20That?%22%3C/p%3E%3Cp%3ESpaghetti%20Aglio%20e%20Olio%20is%20%22spaghetti%20with%20garlic,%20olive%20oil%20and%20chili%20peppers%22and%20is%20sometimes%20called%20%22Midnight%20Pasta%22.%20%20The%20odds%20are,%20you%20have%20everything%20on%20hand%20to%20make%20this.%3C/p%3E%3Cp%3EYou'll%20need%20eight%20cloves%20of%20sliced%20garlic.%20The%20garlic%20will%20be%20slowly,%20and%20carefully,%20sauteed%20in%20olive%20oil,%20and%20it%20will%20become%20sweet%20and%20flavorful.%3C/p%3E%3Cp%3EYou'll%20need%20fresh%20Italian%20parsley%20and%20some%20red%20pepper%20flakes,%20too.%3C/p%3E%3Cp%3EBegin%20by%20bring%20a%20pot%20of%20salted%20water%20to%20a%20boil%20and%20cook%20one%20pound%20of%20spaghetti,%20according%20to%20package%20directions.%3C/p%3E%3Cp%3EIn%20another%20deep%20pan,%20heat%201/3%20cup%20of%20%22good%22%20olive%20oil%20%20on%20medium%20high.%20%20Add%20the%20sliced%20%20garlic%20cloves%20and%20very%20lightly%20saute%20until%20very%20lightly%20golden.%20Add%20red%20pepper%20flakes--%20I%20used%20about%201/2%20teaspoon.%3C/p%3E%3Cp%3EWhen%20the%20spaghetti%20is%20cooked,%20save%201-1/2%20cups%20of%20the%20pasta%20water.%20%20How%20many%20times%20have%20I%20forgotten%20to%20do%20this?%20%20For%20insurance,%20I%20usually%20set%20a%20cup%20in%20the%20strainer,%20as%20a%20reminder.%3C/p%3E%3Cp%3EThis%20is%20totally%20my%20afterthought--%20%20we%20have%20a%20lot%20of%20home%20grown%20tomatoes,%20and%20I%20love%20their%20sweetness%20and%20color.%20%20So,%20I%20asked%20my%20husband%20to%20pick%20some.%3C/p%3E%3Cp%3EIn%20my%20freezer,%20I%20had%20some%20wild%20shrimp,%20already%20deveined,%20so%20I%20gave%20them%20a%20quick%20thaw,%20with%20water.%20%20Why%20not%20add%20those%20two%20ingredients,%20so%20we%20can%20have%20a%20little%20extra%20protein?%3C/p%3E%3Cp%3ECooking%20shrimp%20is%20super%20easy,%20as%20low%20as%20you%20don't%20overcook%20them--%20or%20they%20will%20feel%20like%20rubber.%20In%20a%20separate%20pan,%20I%20heated%20a%20little%20olive%20oil%20then%20cooked%20the%20shrimp%20for%20a%20minute,%20or%20two,%20per%20side--%20just%20until%20they%20turned%20pink.%3C/p%3E%3Cp%3EI%20removed%20them%20from%20the%20pan,%20squeezed%20a%20little%20fresh%20lemon%20juice%20on%20top%20and%20set%20them%20aside.%3C/p%3E%3Cp%3EI%20then%20added%20most%20of%20the%20tomatoes,%20and%20gave%20them%20a%20quick%20saute.%3C/p%3E%3Cp%3EOkay,%20the%20garlic%20is%20tender%20(and%20sweet),%20so%20I%20add%20the%20reserved%20pasta%20water%20to%20the%20pan%20and%20bring%20it%20to%20a%20boil.%20%20%20I%20didn't%20add%20extra%20salt,%20because%20I've%20seasoned%20the%20pasta%20well%20enough--and%20I'm%20going%20to%20be%20adding%20Parmesan%20cheese.%3C/p%3E%3Cp%3EThe%20liquid%20has%20reduced%20to%20about%201/3%20(five%20minutes),%20and%20now%20I%20the%20drained%20pasta%20and%20begin%20tossing.%3C/p%3E%3Cp%3ENow,%20add%20one%20cup%20of%20fresh%20Parmesan%20and%20fresh%20chopped%20Italian%20parsley.%20%20Pretty.%20%20On%20a%20whim,%20I%20added%20some%20lemon%20zest%20to%20the%20pasta,%20to%20complement%20the%20shrimp.%3C/p%3E%3Cp%3EToss%20to%20combine;%20%20then%20add%20the%20cooked%20shrimp--%20which%20is%20totally%20optional.%3C/p%3E%3Cp%3EDinner,%20in%20under%2030%20minutes.%20%20Italian%20food%20is%20my%20favorite%20fast%20food.%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20Yum.%20Mmmm.%20Delicious.%20%20The%20garlic%20is%20sweet,%20and%20not%20overpowering.%20%20This%20satisfies%20my%20need%20for%20food,%20and%20my%20husband%20loves%20it,%20as%20well.%20This%20is%20super%20fast,%20and%20easy%20fast%20dinner%20for%20those%20nights%20when%20you%20don't%20want%20to%20spend%20a%20lot%20of%20time%20in%20the%20kitchen.%20%20Love%20this!%20%20I%20think%20that,%20if%20you%20make%20this%20once,%20you%20really%20don't%20need%20a%20recipe.%20Super%20Easy,%20%20Super%20Delicious!%3C/p%3E%3Cp%3EHow%20easy%20is%20that?!%3C/p%3E%3Cp%3Ethe%20end%20of%20each%20recipe%20post.%20If%20you%20cannot%20view%20it,%20you%20might%20be%20using%3C/p%3E%3Cp%3Ean%20older%20version%20of%20Internet%20Explorer.%20You%20should%20be%20able%20to%20view%20my%3C/p%3E%3Cp%3Erecipe%20cards%20with%20Safari,%20Mozilla,%20Google%20Chrome%20and%20Internet%20Explorer.%3C/p%3E%3Cp%3EIf%20you%20still%20can't%20view%20the%20recipe%20card,%20all%20of%20my%20recipes%20are%20stored%20on%3C/p%3E){kind=link}
