%20place%20to%20keep%20stuff,%20means%20I%20have%20become%20relatively%20decent%20at%20purging.%20When%20I%20realized%20that%20it%20was%20not%20practical%20to%20move%20my%20collection%20of%20back%20issues%20from%20the%20eleventeen%20food%20magazines%20I%20receive%20monthly,%20I%20thought%20I%20would%20try%20to%20consolidate.%20So%20I%20started%20tearing%20out%20every%20recipe%20that%20sounded%20even%20remotely%20interesting,%20from%20every%20magazine%20I%20had%20(after%20reading%20thoroughly%20from%20cover%20to%20cover%20of%20course)%20and%20painstakingly%20cutting%20around%20the%20article%20and%20accompanying%20photo%20and%20gluing%20them%20on%20to%20card%20stock%20that%20I%20then%20slipped%20into%20sheet%20protectors%20and%20put%20into%20binders%20organized%20by%20type%20of%20food.%20I%20just%20read%20that%20sentence%20and%20feel%20perhaps%20there%20is%20something%20seriously%20wrong%20with%20me.%20Apparently%20I%20do%20not%20care%20for%20the%20interwebs%20which%20also%20houses%20every%20one%20of%20these%20recipes.%20As%20you%20can%20imagine,%20this%20was%20time%20consuming,%20and%20while%20I%20stayed%20on%20top%20of%20it%20long%20enough%20to%20create%20a%20minimum%20of%20a%20dozen%20binders,%20I%20have,%20in%20recent%20years,%20fallen%20behind.%20All%20this%20is%20to%20say%20I%20was%20digging%20through%20a%20box%20of%20recipes%20I%20had%20torn%20out%20at%20some%20point%20(and%20purging%20many%20of%20them)%20and%20found%20a%20recipe%20for%20raspberry%20buttermilk%20cake%20from%20the%20June%202009%20issue%20of%20Gourmet.%20(Deb%20from%20Smitten%20Kitchen,%20it%20turns%20out,%20also%20made%20this%20in%20a%20more%20timely%20fashion%E2%80%A6)%3C/p%3E%3Cp%3Eupside-down%3C/p%3E%3Cp%3EI%20have%20made%20this%20three%20times,%20and%20it%20is%20just%20so%20so%20good.%20It%20comes%20together%20in%20minutes,%20and%20bakes%20in%20no%20time%20at%20all,%20and%20you%20are%20encouraged%20to%20eat%20it%20when%20it%20is%20still%20warm,%20so%20in%20less%20than%20an%20hour%20you%20can%20go%20from%20raw%20ingredients%20to%20a%20perfect%20delicious%20cake.%20All%20the%20ingredients%20are%20ones%20you%20may%20have%20on%20hand,%20or%20are%20easily%20acquired.%20This%20is%20easily%20adaptable,%20and%20therefore%20I%20am%20not%20even%20going%20to%20call%20it%20raspberry%20buttermilk%20cake,%20because%20that%20sounds%20so%20limiting.%20I%20have%20made%20it%20with%20raspberries%20and%20blackberries,%20and%20I%20hope%20to%20make%20it%20with%20blueberries%20sooner%20rather%20than%20later.%20I%20also%20added%20citrus%20zest%20because%20I%20felt%20like%20it.%20I%20highly%20recommend%20it.%20A%20raspberry-orange%20zest%20combo%20was%20sweet%20and%20delicious%20and%20perfect%20for%20dessert%20or%20with%20tea,%20and%20a%20blackberry-lime%20version%20was%20great%20with%20vanilla%20ice%20cream,%20but%20was%20tart%20enough%20that%20it%20would%20have%20made%20a%20great%20Sunday%20morning%20breakfast%20treat.%20What%20I%20am%20saying%20is%20that%20you%20should%20make%20this%20and%20quick.%20You%20won%E2%80%99t%20regret%20it.%20I%20might%20do%20the%20same.%3C/p%3E%3Cp%3EPre-heat%20oven%20to%20400%20degrees.%20Butter%20and%20flour%20a%209%E2%80%B3%20cake%20pan,%20or%20spray%20with%20flour%20cooking%20spray.%3C/p%3E%3Cp%3EWhisk%20together%20flour,%20baking%20powder,%20baking%20soda%20and%20salt%20in%20a%20small%20bowl.%20Beat%20butter%20and%202/3%20cup%20sugar%20together%20with%20an%20electric%20mixer%20until%20light%20and%20fluffy,%20about%20two%20minutes.%20Beat%20in%20vanilla%20and%20zest.%20Add%20egg%20and%20beat%20well.%20At%20low%20speed,%20beat%20in%20flour%20mixture%20in%20three%20batches,%20alternating%20with%20buttermilk%20and%20beginning%20and%20ending%20with%20flour%20mixture.%20Beat%20until%20just%20combined.%3C/p%3E%3Cp%3ESpoon%20batter%20into%20cake%20pan%20and%20scatter%20berries%20evenly%20over%20the%20top.%20Sprinkle%20with%20remaining%201%201/2%20tbl%20sugar%20and%20bake%20for%20about%202o%20minutes%20until%20cake%20tester%20inserted%20in%20the%20center%20of%20the%20cake%20comes%20out%20clean.%20Cool%20in%20pan%20for%2010%20minutes,%20then%20turn%20out%20onto%20cooling%20rack%20for%20an%20additional%2010-15%20minutes.%20Invert%20back%20onto%20serving%20plate%20and%20enjoy!%3C/p%3E%3Cp%3Ea%20little%20bit%20of%20heaven...%3C/p%3E%3Cp%3EUpdate!%20Apparently%20our%20water%20is%20back!%20Though%20it%20may%20be%20too%20late%20for%20me.%20My%20stomach%20isn%E2%80%99t%20quite%20right.%20Blerg.%3C/p%3E){kind=link}
