%20and%20made%20my%20lunch,%20and%20cleaned%20most%20of%20my%20apartment,%20and%20I%20was%20as%20ready%20as%20I%20was%20ever%20gonna%20be.%20But%20I%20am%20not%20going%20to%20lie.%20I%20think%20this%20going%20back%20to%20work%20thing%20is%20taking%20a%20toll%20on%20me.%20My%20feet%20are%20a%20mess,%20totally%20not%20used%20to%20real%20shoes.%20They%20like%20flip%20flops,%20and%20in%20re:%20the%20four-inch%20heels%20I%20picked%20out%20for%20today%20that%20perfectly%20match%20my%20necklace%20and%20my%20toe%20nail%20polish?%20Pissed.%20Additionally,%20I%20had%20a%20dream%20last%20night%20that%20I%20got%20a%20$36.56%20ticket%20for%20skinny%20dipping.%20Did%20you%20know%20they%20give%20out%20tickets%20in%20the%20amount%20of%20$36.56%20for%20that?%20I%20was%20in%20a%20pond%20with%20a%20large%20group%20that%20included%20Zachary%20Levi,%20the%20actor%20that%20stars%20in%20Chuck,%20who%20also%20received%20a%20$36.56%20ticket%20for%20skinny%20dipping.%20The%20others%20received%20no%20such%20ticket,%20as%20they%20were%20clothed%20appropriately%20for%20public%20swimming.%20Lastly,%20some%20crazy%20lady%20in%20striped%20socks%20and%20a%20Hawaiian%20shirt%20was%20staring%20maniacally%20at%20me%20this%20morning%20as%20we%20were%20all%20walking%20to%20work.%20Lady,%20it%20is%208%20am,%20keep%20your%20eyes%20to%20yourself.%20Also,%20you%20are%20about%20to%20walk%20into%20something.%3C/p%3E%3Cp%3E*Don%E2%80%99t%20be%20alarmed.%20My%20dad%20would%20never%20think%20I%20was%20a%20jerk.%20He%20is%20incapable%20of%20doing%20so,%20even%20when%20I%20am%20a%20jerk.%20Rent%20Billy%20Madison,%20then%20you%E2%80%99ll%20understand.%3C/p%3E%3Cp%3EGoing%20back%20to%20work%20is%20%20not%20for%20the%20faint%20of%20heart.%20But%20luckily,%20I%20have%20this%20to%20help%20me%20through%20the%20day.%3C/p%3E%3Cp%3Eoh%20man%20oh%20man%20oh%20man%20oh%20man%20oh%20man...%3C/p%3E%3Cp%3EThat%20was%20my%20first%20day%20of%20work%20lunch.%20It%20is%20also%20my%20second%20day%20of%20work%20lunch.%20It%20is%20ratatouille,%20and%20it%20is%20a%20delight.%3C/p%3E%3Cp%3ERatatouille%20is%20perfect%20for%20this%20time%20of%20year%20because%20it%20is%20a%20stew%20of%20sorts%20with%20eggplant,%20summer%20squash,%20tomatoes,%20peppers,%20garlic,%20onions%20and%20herbs,%20and%20even%20thought%20it%20is%20cooked,%20you%20want%20to%20use%20the%20best%20and%20the%20freshest.%20You%20can%20roast%20everything,%20or%20saute%20everything,%20and%20the%20big%20debate%20is%20whether%20all%20the%20ingredients%20should%20be%20cooked%20together,%20or%20cooked%20separately%20and%20combined.%20I%20had%20a%20recipe%20all%20picked%20out,%20I%20was%20going%20to%20saute,%20and%20then%20I%20was%20reading%20Salon.com%20and%20an%20article%20by%20Francis%20Lam%20just%20happened%20to%20pop%20out%20at%20me.%20He%20has%20a%20recipe%20for%20ratatouille%20that%20he%20calls%20%E2%80%9Cweapons-grade%E2%80%9D%20and%20it%20looked%20intriguing.%20I%20couldn%E2%80%99t%20resist,%20and%20I%20am%20so%20glad%20I%20didn%E2%80%99t,%20because%20this%20is%20the%20most%20delicious%20thing%20I%20have%20made%20in%20a%20long%20time.%20I%20am%20planning%20on%20stopping%20at%20the%20farmers%E2%80%99%20market%20again%20tomorrow%20to%20pick%20up%20more%20vegetables%20because%20it%20is%20that%20good%20and%20I%20want%20to%20make%20gallons%20of%20it%20so%20I%20can%20stuff%20it%20into%20my%20freezer%20that%20is%20already%20so%20full%20it%20throws%20stuff%20at%20me%20every%20time%20I%20open%20the%20door.%20Anybody%20want%20some%20frozen%20cupcakes?%3C/p%3E%3Cp%3EThis%20ratatouille%20is%20a%20commitment.%20It%20took%20some%20time,%20but%20I%20did%20not%20have%20to%20be%20singularly%20devoted%20to%20it.%20I%20was%20able%20to%20do%20other%20things%20while%20I%20was%20making%20it,%20like%20cleaning,%20filing,%20watching%20a%20classic%20General%20Hospital%20marathon%20(Brenda%E2%80%99s%20back!)%20and%20planning%20my%20outfits%20for%20the%20week,%20but%20I%20would%20say%20total%20cook%20time%20for%20this%20is%20close%20to%203%20hours.%20WORTH%20IT.%20It%20is%20really%20delicious.%20And%20even%20thought%20it%20has%20a%20fair%20amount%20of%20oil%20in%20it,%20it%20feels%20really%20healthy,%20which%20is%20good%20for%20the%20new%20me.%20The%20one%20that%20is%20going%20to%20celebrate%20the%20new%20job%20with%20a%20new%20workout%20routine.%20The%20adipose%20cells%20that%20have%20found%20me%20are%20getting%20a%20little%20too%20comfortable%E2%80%A6%3C/p%3E%3Cp%3EWith%20ricotta%20and%20toast...lunch%20perfection.%3C/p%3E%3Cp%3ERatatouille%20(makes%20a%20lot%20%E2%80%93%20for%20my%20first%20attempt%20I%20halved%20this%20recipe.)%3C/p%3E%3Cp%3Eadapted%20from%20Salon.com%3C/p%3E%3Cp%3EStart%20by%20cooking%20the%20garlic,%20shallot%20and%20onion%20in%20%C2%BD%20cup%20of%20the%20olive%20oil%20over%20medium-low%20to%20low%20heat%20in%20a%20heavy%20pot%20so%20that%20they%20soften%20and%20give%20up%20their%20liquid.%20Stir%20and%20try%20not%20to%20let%20them%20brown.%20(This%20takes%20awhile.)%20Season%20lightly%20with%20salt%20and%20pepper.%3C/p%3E%3Cp%3EOnce%20they%20became%20pale%20golden%20and%20look%20sticky,%20add%20the%20pur%C3%A9ed%20red%20pepper%20and%20stir%20to%20combine.%20Season%20lightly%20with%20salt%20and%20pepper.%20The%20pepper%20should%20have%20a%20ton%20of%20water,%20so%20let%20it%20cook%20down,%20stirring%20every%20few%20minutes%20to%20make%20sure%20nothing%20gets%20too%20caramelized%20and%20burned,%20you%E2%80%99ll%20have%20a%20rich,%20rusty%20jam.%3C/p%3E%3Cp%3EAdd%20the%20pur%C3%A9ed%20tomatoes.%20Bring%20it%20to%20a%20boil,%20and%20turn%20it%20way%20down%20to%20cook%20off%20all%20its%20liquid.%20Season%20lightly%20with%20salt%20and%20pepper.%20This%20already%20tastes%20awesome,%20but%20you%20are%20going%20to%20continue%20cooking%20for%20a%20long%20time.%20Around%20this%20time,%20heat%20your%20oven%20to%20450.%20Continue%20to%20stir%20the%20tomatoes%20occasionally,%20just%20so%20they%20don%E2%80%99t%20burn%20at%20the%20bottom.%3C/p%3E%3Cp%3EMeanwhile,%20toss%20the%20zucchini%20with%20salt,%20pepper%20and%20half%20of%20the%20rest%20of%20the%20olive%20oil.%20Spread%20in%20one%20layer%20on%20a%20baking%20sheet%20(roast%20in%20batches%20if%20you%20have%20to.)%20Roast%20until%20the%20sizzling%20starts%20to%20slow%20down%20and%20the%20squash%20is%20browning%20underneath.%20Take%20it%20out%20and%20let%20it%20cool%20a%20bit%20before%20putting%20it%20in%20a%20big%20bowl.%20Then%20do%20the%20same%20with%20the%20eggplant,%20putting%20it%20in%20the%20same%20bowl.%3C/p%3E%3Cp%3EWhen%20the%20tomato%20mixture%20has%20cooked%20down%20a%20ton,%20looks%20really%20thick%20and%20drier%20and%20%20tastes%20even%20more%20delightful%20(you%E2%80%99ll%20know%20it%E2%80%99s%20ready%20when%20it%20gives%20the%20oil%20back%20up,%20and%20sounds%20squishy%20when%20you%20stir%20it)%20chop%20up%20some%20thyme%20and%20basil,%20as%20much%20as%20you%20like,%20and%20stir%20the%20herbs%20into%20the%20tomato%20base.%20Carefully%20combine%20the%20tomato%20with%20the%20rest%20of%20the%20vegetables%20so%20that%20you%20don%E2%80%99t%20mash%20up%20your%20zucchini%20and%20eggplant.%20Serve.%20It%E2%80%99s%20even%20better%20the%20next%20day.%20Can%20also%20be%20frozen.%3C/p%3E){kind=link}
