Traditional rice preparation can often take 30 minutes and even longer if you have selected the brown version. On a busy weeknight, walking in at 6:30pm famished and ready to tear through the pantry for anything to put in your mouth can leave you little motivation to pull out your saucepan for this healthy option. Alas, welcome instant rice to the table! This quick-cooking version, I'm sure that is no stranger to any of my CB readers out there, can go from box to plate in 7 minutes or less. What you may not realize is that instant rice is actually standard rice that has been precooked, then carefully dehydrated in a commercial oven until the moisture content is 12 percent or less. No special or artificial ingredients have been added to make it this way, someone has just done all of the work for you. Nice. SO-Instant Brown Rice is still brown rice, just, well, instant! Brown rice is rice that has been hulled with the bran still intact. The bran provides a chewy texture and nutty flavor, and contains vitamins, minerals, and fiber, most things that are lacking with the white variety. It requires a longer cooking time because the bran is a barrier to water. This is why the instant variety is an even better reason to choose the whole grain brown rice- a quicker cooking time for a healthier side to your chicken, beef, or fish.
Cashew Rice with Golden Raisins
INGREDIENTS:
Cooking spray
- 1 1/2 cups Instant Brown Rice
- 1 1/2 cups 99% Fat Free Chicken Broth
- 1/2 tsp salt, optional
- 1/2 tsp Cinnamon, Ground
- 1/3 cup Golden Raisins
- 1/4 cup cilantro, rough chopped
- 1/3 cup cashews, chopped
DIRECTIONS:
Heat a non-stick saucepan over medium high heat. Coat with cooking spray and add brown rice, saute until browned and fragrant, stirring constantly. Add chicken broth and bring to full boil over medium-heat, if desired, season with salt. Remove from heat and let stand, covered, 7 to 9 minutes. Fluff rice with a fork and stir in cashews, cilantro, cinnamon and raisins. Serve hot!
