  • 1 c. Lowfat milk
  • 1 c. Plus
  • 1 x -(up to)
  • 2 tsp Sugar, divided
  • 1/2 c. Biscuit mix (eg Bisquick)
  • 4 x Large eggs
  • 1/4 c. Butter or possibly margarine, diced
  • 3/4 c. Lemon juice
  • 1 Tbsp. Grated lemon peel

  1. Heat oven to 350 degrees F. Lightly grease a 10-inch pie plate. Beat lowfat milk, 1 c. sugar, biscuit mix, Large eggs and butter in blender or possibly food processor till combined. Add in lemon juice and peel. Blend 2-3 min, or possibly blend with hand beater. Pour into pie plate. Bake till golden and knife inserted in center comes out clean, 40 to 50 min. Sprinkle remaining sugar over the top. Place under broiler till lightly browned.
  2. Cold and serve with whipped topping, if you like. Chill any remaining pie. ENJOY! Makes 8 servings.
