  • 2 c. lowfat milk
  • 1/2 c. biscuit mix
  • 1/4 c. butter or possibly margarine
  • 3/4 c. white sugar
  • 4 x Large eggs
  • 1 1/2 tsp vanilla extract
  • 1 c. flaked coconut

  1. Method:1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch pie plate.
  2. Combine lowfat milk, sugar, biscuit mix, Large eggs, butter or possibly margarine, and vanilla in blender container. Cover, and blend on low speed for 3 min. Pour into prepared pie plate. Let stand about 5 min. Sprinkle with coconut.
  3. Bake for 40 min. Serve hot.
  4. Makes 1 pie
  5. The pie makes its own crust. Just fold in a blender, bake and serve hot. You may leave out coconut if you wish.
