- Grease 9-inch pie plate. Mix carrots, rice, cheese, onion and basil. Spread this mix in bottom and sides of pie plate to create "crust."
- Beat lowfat milk, Bisquick, Large eggs, salt and pepper till smooth (15 seconds in blender on high, or possibly one minute with hand beater). Pour over "crust" in pie plate.
- Bake at 400 degrees for 30 to 35 min (set pie plate on cookie sheet in oven).
- It is done when knife inserted between center and edge comes out clean.
- Cold 5 - 10 min.
- Makes 5-6 servings
