- 1.Preheat the oven to 350 degrees. Butter 8 c. of a muffin tin. Heat 1/4 c. of butter in a medium heat. Add in the apples and saute/fry till soft, about 5 min. Add in the brown sugar and stir till melted. Divide the mix among the muffin c. and et aside.
- 2.Cream the remaining 1/4 c. butter with the sugar. Fold in the egg. Slowly fold in the boiling water and then the molasses. Sift the dry ingredients together and then stir them into the batter.
- Divide the batter among the muffin c.. Bake till the top springs back when touched, about 25 min.
- Using a serrated knife, cut off just sufficient of the top of the cakes to make them level. Turn the cakes out of the tin. Immediately place on plates with a scoop of ice cream or possibly a dollop of creme fraiche and serve.
