%3C/p%3E%3Cp%3EIt%20was%20Easter%20recently.%20%20We%20celebrate%20Easter%20here,%20although%20we'll%20never%20turn%20down%20a%20Passover%20Seder%20invitation.%20%20Love%20that%20apple/honey/nut%20stuff...%20%20Anyway,%20my%20mom%20asked%20me%20to%20bring%20hors%20d'oeuvres%20to%20the%20lunch%20she%20was%20serving,%20and%20as%20I%20was%20thinking%20about%20what%20to%20bring,%20I%20realized%20I've%20never%20really%20posted%20anything%20holiday-ish%20here.%20%20Mainly%20because%20the%20things%20I%20post%20are%20last%20minute%20dinner%20ideas,%20rather%20than%20the%20long%20thought-out%20recipes%20that%20one%20cooks%20up%20for%20a%20fancier%20meal.%20%20However,%20it%20turns%20out%20that%20the%20dip%20I%20brought%20kind%20of%20covers%20both%20-%20ok,%20scratch%20that,%20it%20wasn't%20thought-out%20in%20any%20way%20-%20I%20cribbed%20the%20whole%20idea%20from%20an%20Oprah%20Winfrey%20magaizine%20(don't%20judge%20until%20you've%20read%20of%20copy%20-%20there's%20good%20stuff%20in%20there-)%20-%20and%20I%20used%20ingredients%20I%20had%20in%20my%20fridge,%20freezer%20and%20pantry.%3C/p%3E%3Cp%3ESince%20we%20were%20having%20lamb%20for%20the%20main%20meal,%20I%20went%20with%20a%20kind%20of%20Greek%20theme.%20%20In%20my%20fridge%20were%20all%20kinds%20of%20olives%20because%20I%20love%20olives%20and%20no%20one%20else%20in%20my%20immediate%20family%20likes%20them%20as%20much%20as%20I%20do.%20%20So%20I%20marinated%20the%20olives%20in%20some%20oil,%20vinegar%20(I%20used%20red%20wine%20because%20that%20was%20what%20I%20had)%20a%20dash%20of%20Vermouth%20and%20some%20parsley%20and%20some%20thyme.%3C/p%3E%3Cp%3EI%20did%20dash%20out%20to%20the%20store%20because%20I%20had%20a%20sudden%20and%20intense%20craving%20for%20Feta%20-%20bought%20a%20block,%20came%20home,%20broke%20it%20up%20some,%20sprinkled%20it%20with%20cracked%20pepper,%20as%20well%20as%20good%20olive%20oil%20and%20a%20squeeze%20of%20lemon.%20%20Very%20yummy.%3C/p%3E%3Cp%3EFinally,%20I%20made%20this%20dip.%20%20In%20the%20magazine,%20they%20used%20it%20as%20a%20spread%20for%20a%20club-style%20sandwich%20with%20sliced%20tomatoes,%20avocado%20and%20bacon,%20but%20I%20felt%20that%20if%20I%20doubled%20it%20I%20could%20make%20it%20into%20a%20yummy%20dip%20and%20top%20it%20with%20all%20those%20things.%20%20And%20then,%20of%20course%20I%20didn't%20have%20quite%20all%20of%20the%20ingredients%20called%20for%20so%20I%20started%20substituting%20here%20and%20there.%20%20Let%20me%20tell%20you,%20it%20was%20good.%3C/p%3E%3Cp%3EHere's%20what%20it%20looked%20like%20when%20it%20was%20all%20done:%3C/p%3E%3Cp%3EHere's%20how%20I%20made%20it:%3C/p%3E%3Cp%3ELemony%20Bean%20Dip:%3C/p%3E%3Cp%3E2%20tsp%20of%20thyme%20(O%20calls%20for%20rosemary%20which%20I%20simply%20didn't%20have%20-%20but%20could%20be%20good%20-%20you%20could%20also%20use%20parsley,%20chervil,%20or%20even%20some%20basil%20or%20better%20yet,%20a%20bit%20of%20mint)%3C/p%3E%3Cp%3E1/2%20tsp%20cayenne%20pepper%20(or%20tabasco,%20or%20any%20hot%20sauce%20you%20have%20-%20you%20can%20leave%20this%20out%20too)%3C/p%3E%3Cp%3Ecracked%20pepper%20to%20taste%3C/p%3E%3Cp%3Esea%20salt%20to%20taste%3C/p%3E%3Cp%3E1%20avacado%20diced%3C/p%3E%3Cp%3E1%20large%20diced%20tomato%20-%20or%20a%20handful%20of%20cherry%20tomatoes%20quartered%3C/p%3E%3Cp%3E2%20slices%20of%20crisply%20cooked%20bacon,%20crumbled%20(also%20optional-%20but%20I%20always%20have%20bacon%20because%20I%20freeze%20individual%20slices%20on%20a%20cookie%20tray,%20then%20drop%20the%20frozen%20slices%20into%20a%20ziploc%20and%20keep%20them%20in%20the%20freezer.%20%20Easy-peasy.%20%20However,%20to%20my%20horror%20I%20did%20not%20have%20bacon%20the%20saturday%20before%20Easter,%20I%20guess%20we%20must%20have%20eaten%20it%20all%20right%20before%20we%20left%20for%20Spring%20Break,%20and%20so,%20no%20bacon%20was%20crumbled%20on%20my%20dip.)%3C/p%3E%3Cp%3EHeat%20oil%20in%20a%20large%20skillet,%20drop%20in%20garlic%20for%20a%20couple%20of%20minutes,%20but%20don't%20let%20it%20brown%20because%20garlic%20burns%20really%20quickly,%20toss%20in%20the%20zest,%20then%20the%203%20cans%20of%20beans.%20%20Cook%20a%20few%20minutes,%20then%20add%20the%20vermouth,%20broth,%20lemon%20juice,%20herbs%20and%20cayenne.%20%20Let%20this%20all%20cook%20a%20bit%20until%20it%20gets%20thicker.%20%20Then%20whirr%20it%20up%20in%20a%20food%20processor.%20%20Add%20salt%20and%20pepper%20to%20taste.%3C/p%3E%3Cp%3ESo,%20let%20your%20dip%20cool%20until%20it%20reaches%20room%20temp.%20%20When%20you%20go%20to%20serve%20it,%20put%20the%20dip%20in%20a%20shallow%20bowl,%20chop%20your%20avocado%20and%20tomato%20into%20manageable%20chunks%20and%20stir%20them%20in,%20reserving%20some%20for%20the%20top.%20%20Sprinkle%20the%20top%20with%20the%20crumbled%20bacon.%20%20If%20you%20have%20it.%20%20Which%20I%20didn't.%20%20Which%20was%20a%20damn%20shame.%3C/p%3E%3Cp%3EI%20served%20it%20with%20pita%20chips%20from%20the%20grocery%20store,%20as%20well%20as%20some%20thickly%20sliced%20cucumbers%20and%20carrots%3C/p%3E%3Cp%3EThe%20whole%20thing%20really%20complemented%20my%20Mom's%20lamb%20dinner:%20grilled%20lamb,%20green%20peas,%20mashed%20potatoes%20and%20salad.%3C/p%3E%3Cp%3EYesterday,%20I%20had%20a%20left%20over%20lamb%20sandwich%20with%20some%20of%20the%20bean%20dip%20and%20the%20remaining%20feta%20on%20top.%20%20As%20my%2013%20year%20old%20would%20say:%20OMG.%3C/p%3E){kind=link}
