%20Oreos,%20The%20Chili%20Lime%20Chips.%20You%20get%20my%20drift.%20No%20matter%20how%20organic,%20made%20from%20scratch,%20non%20processed%20we%20are,%20the%20itch%20is%20always%20there.%20Whether%20you%20cook%20in%20old%20school%20clay%20or%20are%20performing%20molecular%20gastronomy%20miracles,%20turn%20down%20that%20Ding%20Dong.....go%20ahead...I%20dare%20ya.%3C/p%3E%3Cp%3EThought%20so.%3C/p%3E%3Cp%3EWell,%20I'll%20go%20first.%20Here's%20my%20dirty%20little%20secret,%20the%20thing%20that%20if%20you%20were%20to%20search%20my%20larder%20behind%20all%20the%20Indian%20spices,%20and%20dal%20and%20exotic%20flours%20you%20will%20find%20this.%3C/p%3E%3Cp%3EYes%20this.%20Am%20I%20proud?%20No.%20Do%20I%20always%20have%20it?%20You%20bet%20your%20ass.%3C/p%3E%3Cp%3EIt%20started%20as%20a%20joke%20years%20ago%20in%20LA.%20We%20were%20having%20a%20dinner%20party%20and%20I%20needed%20a%20quick,%20fast%20dessert.%20I%20grabbed%20a%20pack%20of%20instant%20chocolate%20pudding.%20A%20musician%20friend%20who%20was%20a%20guest%20that%20night%20was%20over%20the%20moon%20about%20it.%20He%20raved%20about%20childhood%20pudding%20memories.%20I%20had%20obviously%20hit%20some%20sort%20of%20twisted%20sweet%20spot%20there,%20and%20so%20I%20kept%20buying%20it%20and%20keeping%20it%20in%20the%20cupboard%20...just%20in%20case.%20Okay,%20if%20we're%20really%20being%20honest%20here%20I'm%20never%20without%20this%20stuff.%3C/p%3E%3Cp%3ESo%20why%20am%20I%20talking%20about%20it%20here?%20Well,%20this%20weekend%20it%20all%20came%20out%20in%20a%20mad%20rush.%20I%20was%20cooking%20my%20last%20group%20of%20food%20requests%20for%20my%20friend%20who%20was%20having%20treatment%20for%20thyroid%20cancer.%20He%20was%20finishing%20his%20radiation%20isolation%20and%20was%20going%20back%20to%20his%20regular%20vegetarian%20diet.%20The%20special%20requests%20were%20for%20%20Black%20Eyed%20Peas,%20cornbread,%20and%20a%20pumpkin%20pie.%3C/p%3E%3Cp%3EThe%20black%20eyed%20peas%20Indian%20style%20I%20had%20been%20making%20for%20him%20pretty%20regularly.%20For%20the%20pumpkin%20pie%20and%20the%20cornbread%20I%20decided%20to%20go%20waaaaaaay%20back%20to%20my%20Great%20Grandmothers'%20Native%20Daughters%20of%20the%20Golden%20West%20Cookbook.%20This%20book%20features%20pioneer%20California%20recipes%20with%20directions%20that%20call%20for%20stuff%20like%20%22a%20hot%20fire%22%20and%20%22fresh%20squirrel.%22%20%20We're%20talking%20old%20school%20cooking.%20I%20decided%20to%20make%20the%20pumpkin%20pie%20recipe%20from%20the%20book%20along%20with%20the%20cornbread.%3C/p%3E%3Cp%3EThe%20pie%20crust%20recipe%20is%20extremely%20simple.%20Very%20few%20ingredients,%20sort%20of%20typical%20for%20the%20times.%3C/p%3E%3Cp%3EIt%20comes%20together%20very%20easily.%3C/p%3E%3Cp%3EChocolate%20Cream%20Pie%3C/p%3E%3Cp%3EHere's%20what%20to%20do:%3C/p%3E%3Cp%3EIn%20a%20large%20bowl%20sift%202%20cups%20of%20pastry%20flour.%3C/p%3E%3Cp%3EMeasure%20it,%20add%20in:%3C/p%3E%3Cp%3EAdd%20in%20:%3C/p%3E%3Cp%3E1/3%20cup%20of%20ice%20water%20a%20bit%20at%20a%20time.%3C/p%3E%3Cp%3EMix%20it%20with%20a%20knife%20or%20spatula%20until%20the%20dough%20cleans%20the%20bowl%20(not%20my%20words%20that's%20what%20Vessie%20Orr%20who%20came%20up%20with%20this%20says%20to%20do.)%3C/p%3E%3Cp%3EThe%20idea%20is%20to%20use%20as%20little%20water%20as%20possible.%3C/p%3E%3Cp%3ERoll%20the%20dough%20about%201/8%20of%20an%20inch%20thick%20on%20a%20lightly%20floured%20board.%3C/p%3E%3Cp%3EPlace%20it%20in%20you%20pie%20pan...and%20you%20get%20the%20idea.%3C/p%3E%3Cp%3EThanks%20Vessie!%3C/p%3E%3Cp%3EWell,%20after%20making%20the%20pumpkin%20pie%20which%20is%20one%20crust,%20I%20had%20enough%20for%20a%20second%20crust%20left%20over.%20Of%20course%20cooler%20heads%20would%20have%20said%20stick%20that%20thing%20in%20the%20freezer.%20Use%20it%20later.%20But%20I%20wasn't%20listening%20to%20that%20cooler%20head.%20I%20was%20looking%20at%20the%20picture%20on%20the%20back%20of%20the%20Instant%20pudding%20box...%20you%20know%20the%20part%20that%20says...%22or%20pie%20filling%22%20%22Hmmm,%22%20I%20thought.%20I've%20got%20crust%20and%20I've%20got%20%22or%20pie%20filling.%22%20I'm%20making%20that%20freakin'%20pie.%20Like%20now.%3C/p%3E%3Cp%3EI%20poked%20the%20pie%20crust%20with%20a%20fork%20all%20over%20and%20stuck%20that%20pie%20shell%20into%20a%20450%20degree%20oven%20for%2015%20minutes%20until%20it%20was%20a%20nice%20pale,%20golden%20color.%20It%20was%20done.%3C/p%3E%3Cp%3EAs%20far%20as%20the%20%22or%20pie%20filling%22%20part%20goes%20I%20used%20two%20small%20boxes%20of%20Chocolate%20Fudge%20Instant%20Sugar%20Free%20pudding%20mixed%20for%202%20minutes%20with%202%20and%203/4%20cups%20of%20low%20fat%20milk.%20Instant%20%22or%20pie%20filling%22!%3C/p%3E%3Cp%3EI%20poured%20the%20pie%20filling%20into%20the%20cooled%20pie%20shell%20and%20popped%20it%20into%20the%20fridge.%3C/p%3E%3Cp%3EAs%20far%20as%20the%20whipped%20cream%20topping,%20I%20had%20to%20make%20my%20own%20whipped%20cream%20stabilizer%20since%20the%20cake%20shop%20down%20the%20road%20was%20all%20out.%20It%20turned%20out%20to%20be%20pretty%20easy.%3C/p%3E%3Cp%3EHere's%20what%20to%20do%20for%202%20cups%20of%20whipped%20cream:%3C/p%3E%3Cp%3EDissolve%201%20tsp%20of%20gelatine%20in%202%20Tbs%20of%20cold%20water%20for%20five%20minutes.%3C/p%3E%3Cp%3EWhip%20the%20cream%20in%20a%20chilled%20bowl%20with%201%20tsp%20of%20sugar%20until%20it%20just%20starts%20to%20fluff%20up.%3C/p%3E%3Cp%3EPlace%20the%20gelatine%20mixture%20in%20a%20small%20pan%20(double%20boiler)%20over%20boiling%20water%20until%20it%20dissolves%20completely.%20Let%20it%20cool%20a%20bit%20then%20pour%20it%20all%20into%20the%20whipped%20cream%20at%20once%20and%20continue%20beating%20it%20until%20the%20whipped%20cream%20is%20in%20stiff%20peaks.%3C/p%3E%3Cp%3EIce%20the%20pie%20with%20the%20whipped%20cream.%3C/p%3E%3Cp%3ECut%20a%20slice.%3C/p%3E%3Cp%3ERealize%20that%20this%20whole%20deal%20has%20just%20one%20tsp%20of%20sugar%20in%20it...we%20won't%20even%20discuss%20what%20else%20is%20in%20it%20because%20this%20isn't%20about%20reality.%20This%20is%20about%20pie.%3C/p%3E%3Cp%3EOur%20guests%20loved%20the%20pie%20and%20the%20next%20day%20this%20was%20all%20that%20was%20left%3C/p%3E%3Cp%3EBelieve%20it%20or%20not%20the%20whipped%20cream%20kept%20its'%20shape%20and%20density.%20Who%20knew.%20Vessie%20Orr%20meets%20Rachel%20Ray.%20So,%20there%20it%20is,%20%20my%20guilty%20little%20instant%20pudding%20secret.%20What's%20yours?%3C/p%3E%3Cp%3EComing%20up%20next,%20I%20go%20back%20to%20healthy%20roots%20with%20a%20great%20new%20way%20with%20eggplant.%20Follow%20along%20on%20Twitter%20@kathygori%3C/p%3E){kind=link}
