- 4 tsp canola or extra virgin olive oil, divided
- 1 sweet yellow onion, chopped
- 2 cloves garlic, minced
- 1 (8 oz) container Baby Bella or cremini mushrooms
- 1 lb lean ground turkey breast
- 3 Roasted Red Pepper & Garlic Chicken Sausage links (I used Hans' All Natural)
- 1 (15 oz) can Diced Fire Roasted Tomatoes w/ Garlic
- Green onion, (white and light green tops only)
