  • 2 stk butter, at room temperature (1 c., no substitutes)
  • 1/3 c. unsifted powdered sugar, plus additional 1 c., sifted, for "powdering" the cookies
  • 1 Tbsp. vanilla
  • 1 x heaping c. finely grnd toasted walnuts (see note)
  • 2 c. all-purpose flour
  • 6 ounce cream cheese, at room temperature
  • 1 c. sifted powdered sugar (divided)
  • 1 pt whipping cream (2 c.)
  • 1/4 tsp vanilla

  1. Oregon strawberries (about 5 qts; you'll need roughly 72 berries)
  2. To make cookies: In a medium bowl with an electric mixer, beat the butter, 1/3 c. powdered sugar and vanilla about 1 minute. Blend in nuts and flour till well-mixed. Dough will be stiff.
  3. Divide dough into thirds onto 3 pcs of plastic wrap or possibly parchment paper.
  4. With lightly floured hands, roll into logs about 1 1/2 inches in diameter. Roll up, wrap tightly and refrigeratetill hard, at least 2 hrs.
  5. Shortly before dough is thoroughly chilled, preheat oven to 350 degrees.
  6. Slice chilled logs into 1/4 inch rounds. Cookies don't spread, so place closely together on ungreased cookie sheet, Silpat or possibly parchment paper on cookie sheet.
  7. Bake for 10 to 12 min, or possibly till cookies just begin to brown lightly at the edges.
  8. Sift the 1 c. additional powdered sugar onto jellyroll pan or possibly flat plate.
  9. Place hot cookies on bed of powdered sugar; sift powdered sugar lightly over tops.
  10. To make topping: In a medium bowl, whip cream cheese and3/4 c. powdered sugar. In another medium bowl, whip cream with remaining1/4 c. powdered sugar to soft peaks. Fold cream cheese and whipped cream together, stir in vanilla.
  11. When cookies have cooled, use piping tube to attractively pipe the cream cheese mix on top of each cookie. Top each with a sliced, fanned strawberry.
  12. Chill till serving.
  13. Note: To toast nuts, place the walnuts in 350-degree oven for about 7 to 10 min, till you begin to smell them and they're lightly browned. Grind nuts in food processor or possibly blender till no nutmeat is identifiable.
