What favorite staples do you make from scratch – but in the past you purchased? My answer to this question, is there are too many to mention.
My refrigerator and pantry used to be stocked with packaged “essentials”, and over the last few years that has drastically changed. Gone are the bottled salad dressings, boxes of cookies, granola bars, and hummus to name a few. Now my fridge, freezer and pantry are filled with homemade staples. I used to think it was time consuming to make these things myself, but once I started making them, I was amazed at just how simple it was to make my own. Needless to say this month’s recipe redux theme was right up my alley. We have been challenged to show our best DIY recipe for keeping our cupboards, fridge or freezer stocked with healthy basics.
My favorite homemade staple is hummus. We use it as a dip, spread on sandwiches or toast; there is always at least one container of it in the fridge. The basic recipe has a few simple ingredients that can be put together in a flash. . . and the best part is that you can change it up by adding different spices and ingredients. Here is my basic hummus recipe, and here is one for black bean hummus. Below is my recipe for Hummus with Sun Dried Tomatoes and Basil.
Hummus with Dried Tomatoes and Basil
INGREDIENTS
- ¼ Cup Tahini Sauce
- Juice of ½ lemon
- ¼ Cup Olive Oil
- ¼ Cup Water
- 2 Cloves of Garlic (or more if you love garlic)
- 2 Cups of Cooked Chick Peas (or one can of chick peas)
- 1/2 cup of sun dried tomato halves soaked
- 1/4 cup packed fresh basil
- 1 tsp of ground cumin
INSTRUCTIONS
Add Tahini, Lemon Juice and Olive Oil to Food Process and Process
Scrape down sides;add the garlic and process until garlic is finely chopped
Add the chick peas and process until they are smooth – the consistency will be pasty
Next add the sun dried tomatoes and process until they are blended, then add the basil
Gradually add the water until the hummus is smooth
Serve with whole grain crackers or fresh vegetables
