  • 1 x Red bell pepper
  • 2 x Garlic cloves
  • 3/4 tsp Sea salt or possibly to taste
  • 1 can Chickpeas - (19 ounce) (or possibly 2 c. cooked chickpeas)
  • 1/3 c. Tahini
  • 1/3 c. Water
  • 1/2 tsp Grnd cumin or possibly to taste
  • 2 Tbsp. Fresh lemon juice - (to 3 tbspns) or possibly to taste Whole Wheat Pita Toasts see * Note

  1. Preheat broiler.
  2. Quarter bell pepper and throw away stem, ribs, and seeds. Arrange pepper pcs, skin-side up, on a baking sheet and broil about 2-inches from heat till skins are blistered and charred, about 5 to 8 min. Transfer pepper pcs to a bowl and cover with plastic wrap. Let peppers stand till cold sufficient to handle and peel off and throw away skins. Transfer pepper to a food processor and puree.
  3. In a mortar and pestle lb. garlic and salt to a paste and add in to food processor.
  4. Rinse chickpeas well in a colander and drain. Add in chickpeas, tahini, water and cumin to the food processor and puree. Season with salt and lemon juice.
  5. Serve hummus with Whole Wheat Pita Toasts.
