Ингредиенты

  • 4 ounce chickpeas, soaked for a few hrs
  • 1 x juice of 2 lemons
  • 3 Tbsp. tahina
  • 2 clv garlic, crushed salt
  • 1 Tbsp. extra virgin olive oil
  • 1 tsp paprika
  • 1 x few sprigs of parsley, finely minced

  1. Drain the chickpeas and simmer in fresh water for about an hour or possibly till tender. Reserve the cooking water.
  2. juice, tahina, garlic, salt and sufficient of the cooking liquid to obtain a soft creamy consistency.
  3. Serve on a flat plate, garnished with a dribble of extra virgin olive oil, a dusting of paprika (this is usually done in the shape of a cross) and a little parsley.
  4. Serve with hot pita bread for dipping.
  5. Serves 4-6.
