%20things%20up.%3C/p%3E%3Cp%3ESo,%20as%20you%20might%20have%20guessed,%20the%20Lentil%20soup%20post%20went%20buh~bye.%20I%20was%20so%20beyond%20frustrated,%20it%20was%20easier%20to%20just%20hit%20delete,%20than%20save%20an%20already%20fractured%20post.%20From%20this%20point,%20I%20still%20am%20not%20sure%20what%20the%20jingle%20bells%20went%20on.%3C/p%3E%3Cp%3EAnyway%20back%20to%20the%20marshmallows,%20at%20the%20bakery,%20I%20try%20to%20make%20them%20when%20the%20temperature%20changes.%20If%20you%20did%20not%20know%20this%20by%20now,%20I%20live%20in%20the%20Northeast.%20New%20England%20during%20this%20time%20of%20the%20year,%20is%20worse%20than%20cold.%20%20In%20fact%20just%20Monday,%20the%20kids%20had%20a%202%20hour%20delay,%20due%20to%20the%20-31F%20temperature.%20I%20am%20not%20kidding%20you%20on%20that.%20At%207am,%20when%20my%20oldest%20goes%20to%20school%20(he%20is%209th%20grade)%20the%20temperature%20was%20-20%20degrees.%20I%20can%20understand,%20not%20forcing%20my%20child%20to%20stand%20at%20the%20bus%20stop%20for%2010%20minutes%20at%20-20%20degrees.%3C/p%3E%3Cp%3EI%20don't%20know%20about%20you%20folks,%20and%20judging%20by%20the%20feedjit%20thingy,%20you%20are%20all%20over%20the%20world.%20But%20I%20am%20still,%20in%20the%20middle%20of%20what%20I%20thought%20was%20Vermont,%20and%20now%20I%20am%20thinking%20it%20is%20Antarctica.%20Some%20people%20adore%20cold%20weather,%20and%20I%20love%20it%20to%20a%20point,%20but%20when%20it%20starts%20to%20move%20into%20my%20livelihood,%20I%20get%20a%20little%20antsy.%20I%20have%20not%20had%20a%20full%2040%20hour%20week%20since%20New%20Year's%20Eve~%20due%20to%20the%20bakery%20being%20closed%20for%20cleaning%20and%20regrouping%20and%20the%20@%23$%25&%5E&%23%25%20snow%20storms.%3C/p%3E%3Cp%3EHTML%20is%20a%20learning%20curve%20I%20am%20trying,%20but%20it%20is%20taxing%20nonetheless.%20I%20have%20the%20information,%20right%20here%20in%20my%20brain%20and%20my%20camera,%20but....at%20some%20point%20the%20wires%20get%20crossed.%20Anyway,%20looking%20back%20at%20the%20last%205%20pictures,%20they%20are%20the%20beginnings%20of%20peppermint%20marshmallows.%20The%20first%20photo%20is%20the%20extract%20and%20the%20red%20food%20coloring,%20which%20gives%20the%20marshmallow%20the%20candy%20cane%20effect.%20The%20second%20photo%20is%20the%20gelatin%20that%20has%20been%20bloomed%20after%20being%20sprinkled%20over%20cold%20water.%20The%203rd%20photo%20is%20the%20sugars%20and%20water%20in%20the%20heavy-bottomed%20saucepan.%20The%204th%20photo%20is%20the%20egg%20whites%20and%20vanilla%20whipped%20(like%20a%20red-headed%20step-child)%20to%20stiff%20peaks.%3C/p%3E%3Cp%3EThe%205th%20photo%20is%20what%20your%20pan%20should%20look%20like,%20when%20the%20marshmallows%20land.%20By%20that%20I%20mean,%20wrapped%20with%20foil,%20sprayed%20with%20pan%20spray,%20beyond%20the%20normal%20expectancy%20of%20what%20one%20would%20spray%20+%202,%20and%20sprinkled%20with%20powdered%20sugar.%3C/p%3E%3Cp%3ESugar,%20she%20is%20a%20wild%20banshee!%20You%20have%20to%20know%20what%20you%20are%20looking%20for.%20Believe%20me%20you!!,%20I%20mean%20business%20with%20this%20one.%20Sugar,%20can%20turn%20into%20a%20nasty%20dry%20mess%20within%20minutes,%20if%20you%20don't%20treat%20her%20right,%20and%20I%20speak%20from%20experience.%20I%20have%20come%20from,%20a%20caramel%20state,%20into%20a%20what%20the%20%23$%25&%5E*&%20heck%20result.%20The%20heat,%20plays%20a%20huge%20part%20in%20the%20finished%20product.%20Consistent%20heat%20is%20the%20key.%3C/p%3E%3Cp%3Epan%20spray%3C/p%3E%3Cp%3Eheavy%20duty%20tinfoil%3C/p%3E%3Cp%3E1%2013x9%20pan%3C/p%3E%3Cp%3Epowdered%20sugar%20to%20dust%3C/p%3E%3Cp%3EPrepare%20a%2013x9%20pan%20with%20heavy%20duty%20aluminum%20foil,%20liberally%20spray%20with%20pan%20spray%20and%20sprinkle%20all%20sides%20with%20powdered%20sugar.%20In%20a%20saucepan%20combine%20the%20granulated%20sugar,%20corn%20syrup%20and%20warm%20water%20and%20set%20on%20stove.%20In%20a%20standing%20mixer,%20add%201%20cup%20cold%20water%20and%20sprinkle%206%20tablespoons%20of%20gelatin%20over%20the%20cup%20of%20water,%20set%20aside.%20In%20another%20mixing%20bowl,%20whip%20the%204%20egg%20whites%20with%203%20teaspoons%20of%20vanilla%20extract%20till%20it%20forms%20still%20peaks,%20set%20aside.%20Heat%20the%20sugars%20and%20water,%20until%20the%20temperature%20with%20a%20candy%20thermometer%20reaches%20240.%20In%20that%20standing%20mixer%20containing%20the%20bloomed%20gelatin%20and%20water,%20add%20the%20hot%20sugar%20and%20combine%20with%20a%20wooden%20spoon.%20Turn%20mixer%20on%20and%20graduate%20to%20high%20slowly.%20Mix%20on%20high%20till%20sugar%20becomes%20white,%20fluffy%20and%20double%20in%20volume.%20Add%20the%20whipped%20egg%20whites%20until%20combined,%20mix%20at%20high%20speed%20for%20a%20minute.%20Add%20peppermint%20extract%20and%20red%20food%20coloring%20and%20mix%20on%20low%20for%20a%20few%20turns.(like%20the%20above%20picture)%20Pour%20into%20the%20prepared%2013x9%20pan,%20sprinkle%20with%20powdered%20su
