February is going to be an exciting month for us. We have Super Bowl Sunday (Go, 49'ers!) Valentine's Day is just around the corner (a special day, because that's when my husband proposed to me), and then we're headed to Maui for a week of snorkeling, and sight-seeing. I am counting the days!
Last weekend, I decided to do some housekeeping on my thousands hundreds of food photos I've taken. During that process, I discovered no less than twenty-seven recipes that I never got around to sharing with you. Now, that I created a separate file folder labeled "To Be Posted", here's the first one that I made a year ago.

%20Valentine's%20Day%20is%20just%20around%20the%20corner%20(a%20special%20day,%20because%20that's%20when%20my%20husband%20proposed%20to%20me),%20and%20then%20we're%20headed%20to%20Maui%20for%20a%20week%20of%20snorkeling,%20and%20sight-seeing.%20%20I%20am%20counting%20the%20days!%3C/p%3E%3Cp%3ELast%20weekend,%20I%20decided%20to%20do%20some%20housekeeping%20on%20my%20thousands%20hundreds%20of%20food%20photos%20I've%20taken.%20%20During%20that%20process,%20I%20discovered%20no%20less%20than%20twenty-seven%20recipes%20that%20I%20never%20got%20around%20to%20sharing%20with%20you.%20%20Now,%20that%20I%20created%20a%20separate%20file%20folder%20labeled%20%22To%20Be%20Posted%22,%20here's%20the%20first%20one%20that%20I%20made%20a%20year%20ago.%3C/p%3E%3Cp%3EThe%20funny%20thing%20is,%20I'm%20not%20a%20football%20fan.%20Over%20the%20years,%20I've%20made%20Super%20Bowl%20Sunday%20a%20time%20for%20me%20to%20spoil%20the%20men%20in%20my%20life.%20It%20warms%20a%20mom's%20heart,%20to%20watch%20her%20one-and-only%20child%20and%20his%20stepfather%20watching%20%22The%20Game%22.%20%20Usually,%20our%20SB%20Party%20guest%20list%20is%20just%20the%20two%20of%20them--%20and%20mom,%20cooking%20while%20the%20game%20goes%20on%20and%20listening%20to%20them%20screaming%20and%20jumping%20up%20and%20down.%20This%20year,%20two%20very%20dear%20friends%20have%20relocated%20from%20Rhode%20Island.%20%20That's%20a%20perfect%20excuse%20for%20me%20to%20bake%20a%20cake,%20don't%20you%20think?%3C/p%3E%3Cp%3EI%20tend%20to%20watch%20the%20Super%20Bowl%20commercials.%20%20I%20can't%20help%20myself.%20It's%20cheap%20comedic%20entertainment,%20and%20lasts%20only%20a%20few%20more%20minutes.%20Then,%20I%20go%20back%20to%20flipping%20through%20magazines,%20refilling%20the%20chip%20bowl%20or%20surfing%20the%20internet.%20%20I'm%20such%20a%20girlie-girl.%3C/p%3E%3Cp%3EI%20keep%20the%20Super%20Bowl%20menu%20pretty%20simple,%20and%20I%20make%20what%20the%20men%20love.%20%20The%20usual--%20plenty%20of%20chips,%20guacamole%20(my%20favorite),%20chili%20con%20carne%20(post%20coming%20soon),%20and%20a%20new%20recipe%20or%20two.%20%20Like%20these%20Quick%20Pickled%20Jalapenos.%20%20%20If%20I'm%20going%20to%20make%20Cheese%20Nachos,%20then%20these%20seem%20like%20a%20traditional%20garnish,%20right?%20%20This%20could%20not%20be%20simpler%20to%20make--%20especially%20since%20I%20stocked%20up%20on%20Jalapenos%20to%20make%20my%20Quick%20Salsa%20recipe.%3C/p%3E%3Cp%3EAll%20you%20need%20to%20do%20is%20mix%20sugar,%20salt,%20white%20vinegar,%20water%20and%20oregano%20into%20a%20pot.%20Bring%20it%20to%20a%20boil,%20add%20sliced%20jalapenos,%20and%20crushed%20garlic%20cloves,%20%20and%20turn%20off%20the%20heat.%3C/p%3E%3Cp%3EHowever,%20I%20want%20to%20give%20you%20fair%20warning.%20%20If%20you%20have%20a%20habit%20of%20leaning%20over%20to%20smell%20whatever%20it%20is%20that%20you're%20cooking--%20this%20is%20one%20recipe%20where%20you%20don't%20want%20to%20do%20that.%20Whoa!%20%20I%20did%20just%20that,%20and%20my%20sinuses%20were%20immediately%20cleared!%20%20It%20brought%20tears%20to%20my%20eyes,%20a%20year%20ago,%20but%20I%20still%20remember%20it.%3C/p%3E%3Cp%3E(I%20wish%20that%20the%20beautiful%20bright%20green%20color%20would%20last,%20but%20that%20just%20isn't%20possible.)%20%20Let%20them%20cool%20a%20bit--%20about%20ten%20minutes%20or%20so.%3C/p%3E%3Cp%3EUsing%20tongs,%20pack%20a%20clean%20Mason%20jar%20(I%20used%20an%208%20oz%20jar)%20with%20the%20peppers%20and%20then%20fill%20with%20the%20brining%20liquid.%20%20Cover%20tightly%20and%20keep%20them%20refrigerated.%20%20These%20lasted%20for%20a%20couple%20of%20weeks.%20So,%20there%20you%20have%20it--%20Make-It-Yourself-Pickled-Jalapenos!%20%20It's%20as%20easy%20as%20Make-It-Yourself-Taco-Bell-Taco%20Sauce.%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20Are%20these%20hot?%20%20It%20depends%20on%20your%20tongue.%20%20To%20me,%20they%20were%20pretty%20hot,%20and%20I'd%20need%20a%20fist%20full%20of%20Tums%20to%20survive%20these.%20%20But,%20to%20my%20men,%20they%20loved%20them.%20%20Like%20I%20said,%20Super%20Bowl%20food%20is%20all%20about%20what%20my%20football%20fans%20love%20to%20eat.%20%20%20These%20aren't%20water%20canned,%20which%20means%20I%20didn't%20sanitize%20the%20jar%20and%20lids,%20nor%20did%20I%20get%20a%20good%20vacuum%20seal.%20%20That%20means,%20don't%20leave%20them%20on%20a%20pantry%20shelf%20or%20on%20the%20counter%20for%20too%20long.%3C/p%3E%3Cp%3ESo,%20why%20am%20I%20rooting%20for%20the%20San%20Francisco%2049'ers?%20%20There%20is%20a%20piece%20of%20my%20heart%20in%20San%20Francisco.%20I'm%20just%20a%20two-hour%20drive%20away,%20and%20this%20City%20is%20very%20near%20and%20dear%20to%20my%20heart.%20%20Truthfully,%20I'm%20always%20looking%20out%20for%20the%20Budweiser%20Clydesdale%20commercials.%20%20I'll%20always%20be%20an%20Equestrian%20at%20heart.%3C/p%3E){kind=link}
