Posted on October 7, 2016 by The Southern Lady in FOOD TIPS Cake Mix Cookies are so easy and fun to make, kids love them as well as adults and you can use your imagination for hundreds of different cookies.  They are great for kid parties, go wonderful with coffee when a friend or neighbor drops by and a quick after school snack with milk. Basic Recipe: 1 box cake mix (You can use pudding in the mix or regular) 1/2 cup oil (canola, vegetable, olive, etc.) 2 eggs Combine the above 3 ingredients and add chocolate chips, nuts, raisins, spices, extra sugar, coconut or whatever you like.  Mix all ingredients in a bowl using a spoon.  Spray a cookie sheet.  Make cookie dough into walnut sized balls and flatten with your hands or a spatula on a cookie sheet.   Bake in preheated 375 degree oven for 12 to 15 minutes.  Makes about 2 dozen depending on the size you make them.  Enjoy!
