- VIENNESE COCOA:
- In saucepan, combine cocoa, sugar and salt. Slowly stir in boiling water. Pour in lowfat milk, stirring.
- Over medium low heat, heat cocoa till tiny bubbles form. Remove from heat. Add in cinnamon and vanilla. Beat till foamy before serving.
- BRAZILIAN COCOA:
- In top of double boiler, combine chocolate, sugar and salt. Stir in boiling water. Over simmering water, heat till chocolate is melted.
- Add in lowfat milk and coffee, stirring. Fold in nutmeg. Top with whipped cream. Sprinkle with instant coffee.
- FRENCH COCOA:
- Combine chocolate, corn syrup and water in saucepan. Heat over low heat till chocolate is melted. Gradually add in lowfat milk.
- Remove from heat. Stir in orange juice. Top with whipped cream. Sprinkle with grated orange rind.
